I recently made this fire roasted tomato and goat cheese dip, and honestly, it turned out better than I expected. Ingredients
  

  • 1 can 14 oz fire roasted tomatoes – adds a smoky, slightly charred flavor that makes the dip stand out
  • 200 g goat cheese – creamy tangy, and melts beautifully into the tomatoes
  • 2 cloves garlic minced – enhances depth and gives a subtle kick
  • 2 tablespoons olive oil – helps blend flavors and adds richness
  • 1/2 teaspoon dried oregano – brings a warm earthy note
  • 1/4 teaspoon red pepper flakes – optional for a gentle heat
  • Salt to taste – balances the acidity of tomatoes
  • Black pepper to taste – adds mild spice and depth
  • Fresh basil or parsley for garnish – brightens the final dish

Method
 

  1. Start by preheating your oven to 375°F (190°C). In a baking dish, pour in the fire roasted tomatoes and spread them evenly. Add minced garlic, olive oil, oregano, salt, and pepper, then mix gently to combine all the flavors.
  2. Place chunks of goat cheese directly over the tomato mixture. Don’t worry about spreading it perfectly—it will melt and blend as it bakes. Sprinkle red pepper flakes on top if you want a bit of heat.
  3. Transfer the dish to the oven and bake for about 20 minutes. The cheese should become soft and slightly golden, while the tomatoes bubble around the edges. This step brings everything together into a rich, cohesive dip.
  4. Remove the dish from the oven and gently stir the melted goat cheese into the tomatoes. This creates a creamy, smooth texture. Taste and adjust seasoning if needed before serving.
  5. Top with freshly chopped basil or parsley for a burst of color and freshness. Serve immediately while warm for the best flavor and texture.
