Ingredients
  

  • 1 1/4 cup honey – I use a mild floral honey; it mixes beautifully with the orange zest.
  • 2 teaspoons vanilla extract – adds depth and warmth to the syrup.
  • 1 tablespoon fresh orange juice – freshly squeezed works best not bottled.
  • Zest of one orange – grating directly over the syrup preserves the oils for extra aroma.
  • Pinch of ground nutmeg – a subtle spice that complements both apricots and walnuts.
  • 8 ounces chopped walnuts – lightly toasted walnuts enhance crunch and flavor.
  • 10 fresh apricots halved and pitted – always pick firm but ripe apricots for sweetness.
  • 11 ounces goat cheese – soft creamy goat cheese balances the sweetness perfectly.

Method
 

  1. Start by whisking honey, vanilla, orange juice, orange zest, and nutmeg in a medium saucepan. Heat over medium-high until it comes to a gentle boil, making sure the flavors meld together perfectly.
  2. Once boiling, stir in the chopped walnuts and cook for about 4 minutes, stirring occasionally. This toasts the nuts lightly and infuses the syrup with a nutty crunch.
  3. Place apricot halves on a serving plate and top each with a slice of goat cheese. Spoon a tablespoon of the warm syrup over each apricot for a glossy, irresistible finish.

Notes

  • I like to chill the apricots for a few minutes before serving; it makes the texture more refreshing.
  • Toasting walnuts slightly beforehand enhances their flavor even more.
  • Use a microplane for orange zest to avoid bitter pith.
