Fruit and Cheese Lunchbox Idea

I started putting this lunchbox together on a morning when I had exactly five minutes and zero patience for making a sandwich. I grabbed grapes, cubed some cheese, sliced an apple, and tossed in a handful of almonds, and that was it.

Ingredients
  

  • 1 cup red or green grapes — wash them well and leave them on the stem or pull them off whichever your kid prefers
  • 1 small apple sliced — a squeeze of lemon juice keeps the slices from browning by lunchtime
  • 4 ounces cheese cubed — cheddar, mozzarella, or brie all work, just use whatever's already in your fridge
  • 2 tablespoons almonds — swap for a hard-boiled egg if you want a bigger protein boost
  • 1 teaspoon lemon juice optional — this is your apple's best friend against browning

Method
 

  1. Rinse your grapes under cool water and pat them dry with a towel. If you like, pull a few off the vine for easier snacking, or leave them attached for a fun presentation. Set them aside while you prep the rest.
  2. Cut your apple into thin wedges or slices, discarding the core as you go. Toss the slices with a small squeeze of lemon juice to stop them from turning brown before lunchtime arrives.
  3. Slice your cheese block into small, bite-sized cubes using your paring knife. Keep the pieces roughly the same size so they're easy for little hands to grab and eat.
  4. Place the grapes in the largest compartment of your lunchbox, then add the apple slices right beside them. Put the cubed cheese into its own separate compartment so it doesn't get squished.
  5. Tuck the almonds into the smallest compartment, or swap them for a hard-boiled egg if you want more staying power. Close the lid, pack it into an insulated lunch bag with an ice pack, and it's ready to go.

Notes

  • I always toss my apple slices in lemon juice first, since skipping this step means soggy brown apples by noon.
  • I like prepping grapes and cheese the night before, which cuts my morning prep time down to almost nothing.
  • I never skip the ice pack, especially on warmer days when cheese can get soft and unappetizing fast.
  • I try to use a compartmentalized box instead of one big container, because it keeps everything from turning into a mushy pile.
  • I rotate the cheese variety every week so my kids don't get bored of the same flavor over and over.
