Garlic Butter Lettuce, Tomato & Grilled Chicken Sandwich

I recently made this Garlic Butter Lettuce, Tomato & Grilled Chicken Sandwich, and it instantly became one of my favorite homemade sandwiches. The combination of juicy grilled chicken, crisp lettuce, fresh tomatoes, and buttery garlic bread creates an incredible balance of flavors. Ingredients
  

  • 8 slices thick-cut bread Texas toast or similar – Thick bread holds up well to the juicy chicken and garlic butter.
  • 1/2 cup unsalted butter softened – Softened butter spreads evenly and creates a golden crust.
  • 2 –3 garlic cloves minced – Fresh garlic delivers the best flavor and aroma.
  • 1 teaspoon dried Italian seasoning – Adds extra depth and a subtle herb flavor.
  • 2 boneless skinless chicken breasts – Choose evenly sized pieces for consistent cooking.
  • 1 tablespoon olive oil – Helps keep the chicken moist while grilling.
  • 1 teaspoon paprika – Adds mild smokiness and beautiful color.
  • 1/2 teaspoon salt – Enhances the overall flavor of the sandwich.
  • 1/2 teaspoon black pepper – Provides gentle heat and balance.
  • 4 lettuce leaves – Crisp lettuce adds freshness and texture.
  • 2 large tomatoes sliced – Use ripe tomatoes for the best flavor.
  • 4 slices cheddar cheese optional – Adds a creamy, savory element.
  • 2 tablespoons mayonnaise optional – Creates extra richness and moisture.

Method
 

  1. In a small bowl, combine the softened butter, minced garlic, and Italian seasoning. Mix until everything is fully incorporated. This garlic butter will add incredible flavor and help the bread achieve a beautiful golden crust.
  2. Pat the chicken breasts dry with paper towels before seasoning. Drizzle with olive oil, then sprinkle with paprika, salt, and black pepper. Coat both sides evenly so every bite is flavorful.
  3. Heat a grill or grill pan over medium-high heat. Cook the chicken for about 5–7 minutes per side, depending on thickness, until fully cooked. Let the chicken rest for several minutes before slicing.
  4. Spread the garlic butter mixture generously on one side of each bread slice. Make sure the butter reaches the edges for even browning and maximum flavor.
  5. Place the bread butter-side down on a hot skillet or griddle. Toast until golden brown and crispy. Flip briefly if needed to warm the opposite side.
  6. If using cheese, place a slice on the warm bread while it is still hot. The residual heat will help the cheese soften slightly and become creamy.
  7. Layer lettuce leaves on the bread first to create a crisp base. Add sliced grilled chicken, tomato slices, and any additional toppings you prefer.
  8. Spread mayonnaise or your preferred sauce on the top slice of bread. This adds moisture and enhances the overall flavor profile of the sandwich.
  9. Place the top slice of bread over the fillings and gently press down. Slice the sandwich diagonally for a professional presentation and easier serving.

Notes

  • I always let the chicken rest for at least 5 minutes before slicing to keep it juicy.
  • I prefer using fresh garlic instead of garlic powder because the flavor is much richer.
  • I lightly season the tomato slices with a pinch of salt for extra flavor.
  • I toast the bread until deeply golden for maximum crunch.
  • I sometimes add a thin layer of garlic aioli to boost the garlic flavor.
  • I use fresh lettuce leaves right before serving to maintain crispness.
  • I avoid overcooking the chicken because it can become dry very quickly.
