Garlic Parmesan Chicken Meatloaf Muffins Recipe

I made these garlic parmesan chicken meatloaf muffins on a busy weeknight, and my family asked for seconds before the pan had even cooled. They taste just like chicken parmesan, but there is no breading and no frying involved.

Ingredients
  

  • 2 lbs ground chicken – The lean protein-rich base; keep it cold until you mix.
  • 2/3 cup cooked broccoli finely chopped – Sneaks in extra veggies; chop it small so it blends in.
  • 1/2 cup grated parmesan cheese – Adds salty nutty flavor; grate it fresh for better melt.
  • 1/4 cup tomato sauce plus more for topping – Keeps the muffins moist and gives classic Italian flavor.
  • 2 cloves garlic grated – Spreads garlic flavor evenly; grating beats chopping here.
  • 1 teaspoon dried oregano – Brings earthy familiar Italian aroma.
  • 1/2 teaspoon dried basil – Adds a touch of sweetness and depth.
  • 2/3 cup shredded mozzarella cheese – Makes the gooey golden topping; shred it yourself not from a bag.
  • Non-stick cooking spray – Stops the muffins from sticking to the pan.
  • Chopped fresh parsley or basil optional – Adds color and freshness at the end.

Method
 

  1. Cook the broccoli until tender, then chop it very finely. Grate the garlic, the parmesan, and the mozzarella. Having everything ready makes the mixing step quick and stress-free.
  2. Set your oven to 350°F. Spray the muffin pan generously with non-stick spray, including the tops of the pan. Set it aside while you make the chicken mixture.
  3. Add the ground chicken, broccoli, parmesan, tomato sauce, garlic, oregano, and basil to a large bowl. Mix with clean hands until everything is well combined. Stop as soon as it looks even so the texture stays tender.
  4. Divide the mixture evenly among the 12 muffin cups. An ice cream scoop makes this fast and keeps the sizes equal. Press each one down gently so it holds its shape while baking.
  5. Spread a thin layer of tomato sauce over each muffin with a small spoon or brush. Sprinkle a generous pinch of shredded mozzarella on top. This is where the cheesy, pizza-style magic begins.
  6. Slide the pan into the oven and bake for 15 to 18 minutes. The muffins are ready when the center reaches 165°F on a thermometer. The cheese should look melted and bubbly.
  7. For a golden top, switch the oven to broil for 1 to 2 minutes. Stay close and watch carefully, because cheese browns fast. Let the muffins cool for a couple of minutes, then garnish and serve.

Notes

  • I mix the meat with clean hands, but I stop as soon as everything looks combined so the muffins stay soft.
  • I chop the cooked broccoli almost to a mince, so my kids never spot the green bits.
  • I use an ice cream scoop every time, because equal portions mean even cooking.
