Ghost Pepper Jack Cheese Ball Recipe

I made this ghost pepper jack cheese ball for a game night, and it was gone before halftime. It starts with creamy cheese, warm smoky spices, and just a pinch of ghost pepper powder. I rolled mine in shredded pepper jack, which added a gentle kick and a lovely melty flavor.
Total Time 40 minutes

Ingredients

  • 8 ounces cream cheese softened: Soft cheese blends smoothly, so set it out ahead of time.
  • 1/2 teaspoon garlic powder: Adds a savory base flavor.
  • 1/4 teaspoon onion powder: Gives a mild sweetness that balances the heat.
  • 1/4 teaspoon chili powder: Builds a warm earthy layer of spice.
  • 1/2 teaspoon smoked paprika: Brings the smoky flavor so please don't skip it.
  • 1/8 teaspoon ghost pepper powder: This is your heat so level the spoon and measure carefully.
  • 1/4 cup shredded pepper jack cheese for the outside: Grate it fresh from a block because it sticks better than bagged shreds.

Method

  1. Take the cream cheese out of the fridge until it turns soft. Measure all the spices into a small dish so they are ready to go. Grate your pepper jack and set it aside for later.
  2. Add the cream cheese and all the spices to a medium bowl. Use a hand mixer to beat them together until the mixture looks even and smooth. Stop once or twice and scrape the bottom of the bowl with a rubber spatula.
  3. Cover the bowl and refrigerate it for 30 to 45 minutes. This rest time lets the spices soak into the cream cheese. It also firms the mixture so it is easy to shape.
  4. Take the bowl out of the fridge and scoop the mixture into your hands. I roll it gently, like a giant meatball, until it looks round and smooth. Set the ball on a small plate so it is ready for coating.
  5. Sprinkle the shredded pepper jack on a plate in an even layer. Roll the cheese ball through it, pressing lightly so the cheese sticks. Turn it until every side is covered.
  6. Refrigerate the finished ball until you are ready to eat. Move it to a serving plate and place a cheese knife beside it. Serve with your favorite crackers and enjoy.

Notes

  • I always start with the exact 1/8 teaspoon of ghost pepper powder. It is easy to add more heat later, but you can't take it out.
  • I wash my hands right after handling ghost pepper powder. I also keep them away from my eyes.
  • I use smoked paprika every time. It gives the ball a deep, smoky flavor that goes so well with the heat.
  • I scrape the bowl well while mixing. This stops little cream cheese lumps from hiding at the bottom.
  • I give the mixture the full 30 minutes in the fridge. The flavor tastes much rounder after that rest.
  • I grate pepper jack from a block. It clings to the ball and melts on the tongue in a nicer way.
  • I roll the ball with my hands and then smooth it with my palms. It gives a clean, round shape.
