Greek Yogurt Parfait Recipe

I started making Greek yogurt parfaits on the mornings I had zero time to cook, and honestly, they turned into my favorite breakfast even on lazy weekends. I love how the creamy yogurt, crunchy granola, and juicy berries come together in just minutes without ever touching a stove.

Ingredients
  

  • Plain Greek yogurt 2 cups – the protein-rich base that makes this parfait so filling
  • Honey 3 tablespoons – a natural sweetener; swap in maple syrup for a vegan version
  • Granola 1 cup – adds the crunch factor; pick a low-sugar variety if you're watching added sugar
  • Mixed berries 2 cups (strawberries, blueberries, raspberries) – fresh berries hold their shape far better than frozen, which turn mushy
  • Banana 1 medium, sliced – brings natural sweetness and a soft texture between layers
  • Chia seeds 1 tablespoon – boosts fiber and gives the yogurt a slightly thicker texture
  • Vanilla extract 1/2 teaspoon – rounds out the flavor without needing extra sugar
  • Chopped almonds or walnuts 1/4 cup – for crunch and a dose of healthy fats
  • Fresh mint leaves a few – purely for a fresh, pretty garnish

Method
 

  1. I start by whisking the Greek yogurt, honey, and vanilla extract together in a mixing bowl until it's smooth and evenly sweetened. This step only takes a minute, but it makes a big difference in flavor since the honey doesn't stay clumped in one spot. I also stir in the chia seeds here so they have time to soften slightly while I prep everything else.
  2. While the yogurt mixture rests, I wash and slice my berries and banana so everything is ready to go. I like to keep the granola in a separate bowl until I'm ready to layer, since it stays crunchier that way. If I'm using nuts, I chop them roughly here too, so they're ready for the top layer or mixed in between.
  3. Now comes the fun part. I spoon a layer of the yogurt mixture into the bottom of each glass, followed by a layer of berries, then a sprinkle of granola. I repeat this two or three times depending on the size of my glass, finishing with a final dollop of yogurt on top so the parfait looks neat and full.
  4. Once everything is layered, I top each parfait with a few slices of banana, a scatter of chopped almonds, and a fresh mint leaf for color. If I'm not eating it right away, I pop it in the fridge for about 15 minutes so the flavors settle together a bit before digging in.

Notes

  • I always add the granola last, right before eating, because it goes soft fast once it touches yogurt.
  • I like using thick, full-fat Greek yogurt since it holds its shape in the layers much better than a thin, watery one.
  • If I want a sweeter parfait without extra sugar, I mash half a banana straight into the yogurt mixture.
  • I've found that chilling the fruit beforehand makes the whole parfait taste fresher and more refreshing.
  • When I'm short on time, I make the yogurt mixture the night before so morning assembly takes two minutes.
