Green Witch Smoothie Recipe

I first blended this Green Witch Smoothie on a chilly October morning when my kitchen counter was covered in Halloween decorations and I needed something quick before school drop-off. I love that it turns ordinary spinach and pineapple into a glowing green potion that even picky little eaters get excited about.
Total Time 5 minutes
Servings: 2

Ingredients

  • 1 cup frozen spinach or kale packed
  • 1 ripe banana peeled
  • 1/2 cup pineapple chunks with juice
  • 1/2 cup milk of choice dairy or plant-based
  • 1 scoop vanilla protein powder
  • 1/2 cup ice cubes optional for a thicker texture

Method

  1. I pour the milk into the blender before anything else. Starting with liquid keeps the blades from struggling against dry or frozen ingredients right away. It also helps everything else blend into a smoother consistency without leaving chunks behind.
  2. Next, I add the frozen spinach or kale, followed by the banana and pineapple chunks with their juice. Layering this way means the blender pulls the greens down into the liquid first, which makes for a much smoother final texture.
  3. I sprinkle in the protein powder and toss in ice if I'm using it. This is the point where I decide how thick I want the smoothie, since more ice always means a slushier texture.
  4. I blend everything on high for about 60 to 90 seconds, stopping once to scrape down the sides with my spatula. I keep blending until there are no visible flecks of greens left and the color turns that perfect witchy shade of green.
  5. Once it's smooth, I pour it straight into tall glasses. I like to add a fun straw right away so it's ready to hand off the moment someone wanders into the kitchen.

Notes

  • I always freeze my spinach ahead of time in small bags so it's ready to grab on busy mornings.
  • I found that a riper banana with more brown spots gives a noticeably sweeter smoothie, so I let mine ripen on the counter a couple extra days.
  • I like to taste the smoothie before pouring it, since sometimes I add a touch more pineapple juice if it needs extra sweetness.
  • I keep my blender running a little longer than I think I need to, because half-blended greens can leave a slightly gritty texture I don't enjoy.
  • I've started keeping frozen banana chunks in the freezer too, since they make the smoothie extra creamy without any added ice.
