Ground Beef & Potato Taco Bowl Recipe

I recently made this Ground Beef and Potato Taco Bowl, and honestly, it instantly became one of my go-to comfort meals. I love how simple ingredients turn into something incredibly satisfying and full of flavor. The combination of crispy potatoes and seasoned beef is just unbeatable
Total Time 40 minutes
Servings: 4

Ingredients

  • 1 lb ground beef – use 80/20 for the best balance of flavor and juiciness
  • 2 medium russet potatoes diced – they crisp up nicely compared to waxy potatoes
  • 1 tbsp olive oil – helps potatoes cook evenly and prevents sticking
  • 1 small onion finely chopped – adds sweetness and depth
  • 2 cloves garlic minced – fresh garlic gives better flavor than powder
  • 1 packet taco seasoning or homemade mix – control salt by making your own
  • ½ cup water – helps blend seasoning into the beef
  • 1 cup shredded cheddar cheese – grate fresh for better melting
  • 1 cup lettuce shredded – adds crunch and freshness
  • ½ cup diced tomatoes – use ripe tomatoes for best taste
  • ¼ cup sour cream – adds creaminess and balances spices
  • ¼ cup salsa – boosts flavor instantly
  • Salt and pepper to taste – season at every stage for best results

Method

  1. Start by washing and dicing the potatoes into small cubes for even cooking. Heat olive oil in a skillet and add the potatoes in a single layer. Cook them until golden and crispy, stirring occasionally to prevent burning.
  2. In the same pan or a separate skillet, add the ground beef and cook over medium heat. Break it apart with a spatula and cook until browned completely. Drain excess fat if needed for a cleaner taste.
  3. Add chopped onion and minced garlic to the beef and cook until fragrant. Stir in taco seasoning and water, letting it simmer until the mixture thickens. This step ensures every bite is packed with flavor.
  4. Once the potatoes are crispy and the beef is seasoned, combine them in one pan. Mix everything well so the flavors blend together. Let it cook for a couple more minutes to marry the textures.
  5. Start with a base of the beef and potato mixture in a bowl. Add lettuce, tomatoes, cheese, sour cream, and salsa on top. Customize with your favorite toppings for a colorful and delicious finish.

Notes

  • I always cook potatoes separately first to get them extra crispy
  • I prefer making my own taco seasoning for better control of spices
  • Letting the beef simmer longer enhances the flavor depth
  • I like adding a squeeze of lime juice at the end for freshness
  • Using freshly grated cheese makes a noticeable difference in texture
