Halloween Candy Corn Fruit Salad Recipe

I first made this candy corn fruit salad for my son's school Halloween party, and I honestly didn't expect it to disappear as fast as it did. I wanted something sweet but not sugar-loaded, and layering the fruit to look like actual candy corn turned out to be such a fun trick.

Ingredients
  

  • 2 cups mandarin orange segments drained – this is your orange "candy corn" layer and adds a juicy, tangy pop
  • 2 cups fresh pineapple chunks – gives the yellow layer its color; fresh tastes far better here than canned
  • 2 ripe bananas sliced – creates the white tip of the candy corn look, so pick ones that aren't overripe
  • 1 cup vanilla yogurt – this is the creamy base that holds everything together without feeling heavy
  • 1/2 cup whipped topping – folds in for a light fluffy texture that coats the fruit evenly
  • 1 tablespoon fresh lemon juice – keeps the bananas from browning while they sit
  • 1/2 cup candy corn candies – the fun Halloween garnish that ties the whole theme together
  • 1 cup mini marshmallows optional – adds a little extra sweetness and a soft, chewy bite

Method
 

  1. Start by draining the mandarin oranges well so they don't water down the salad later on. Chop the fresh pineapple into bite-sized chunks and slice the bananas into thin rounds. Toss the banana slices with the lemon juice right away so they stay bright and don't turn brown.
  2. In a small bowl, whisk the vanilla yogurt until it's smooth and lump-free. Gently fold in the whipped topping using your spatula, turning the bowl as you go rather than stirring hard. You want the mixture light and airy, not deflated or runny.
  3. Add the mandarin oranges, pineapple, and bananas into your large mixing bowl. Pour the creamy dressing over the fruit and fold everything together carefully with the spatula. Stop as soon as the fruit is evenly coated so it doesn't turn mushy.
  4. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 30 minutes so the flavors have time to blend together. This step also firms the dressing up slightly, which makes serving much neater.
  5. Right before you're ready to serve, scatter the candy corn candies and mini marshmallows over the top. I always wait until the last minute for this part because the candy corn can get sticky and start to melt if it sits too long. A light touch here keeps the presentation clean.
  6. Give the salad one last gentle toss, or leave the candy corn candies resting on top for looks. Spoon it into bowls or cups and watch it disappear within minutes at any Halloween gathering. It's just as good eaten straight from the fridge as a quick snack.

Notes

  • I always toss my banana slices in lemon juice first, because skipping that step leaves me with sad, brown bananas within an hour.
  • I like using full-fat vanilla yogurt instead of a low-fat version since it keeps the dressing from turning watery after chilling.
  • I never add the candy corn candies until right before serving, because they start to bleed color and go soft if they sit in the fridge too long.
  • I drain my canned fruit really well, pressing it gently with a paper towel, so my dressing doesn't turn thin and separate.
