Halloween Fruit And Veggie Tray Recipe

I made this Halloween fruit and veggie tray for our neighborhood party, and it vanished faster than the candy bowl. I wanted a snack that looked spooky but still gave the kids something fresh before the sugar rush.

Ingredients
  

  • 2 lb baby carrots: they form the orange pumpkin base and they need no peeling.
  • 2 mini seedless cucumbers sliced: thin rounds make the smile, so keep the skin on for color.
  • 2 celery stalks: cut into chunks for the pumpkin stem.
  • 1 mini orange bell pepper: this is the pumpkin nose so leave the stem on.
  • 1 cup cherry tomatoes: they add red pops so choose firm ones that won't squish.
  • 1 cup sugar snap peas: crunchy green bites so pick plump, bright pods.
  • 1 cup broccoli florets: they look like spooky treetops so cut them bite-sized.
  • 1 cup hummus: it becomes the dip eyes so pick a real-food brand with simple ingredients.
  • 1/2 cup ranch or Greek yogurt veggie dip: a second flavor for picky eaters so serve it chilled.
  • 1/4 cup black olives optional: great for a tiny spider on the dip, so drain them well.
  • 2 oranges peeled and segmented: they add sweet orange color, so remove the white pith.
  • 2 green apples sliced: tart green slices for contrast, so slice them last.
  • 2 red apples sliced: they bring the red, so leave the peel on.
  • 1 cup grapes: green and purple grapes add Halloween colors so wash and dry them well.
  • 1 banana: it makes the fruit pumpkin smile so slice it right before serving.
  • 1 cup strawberries: they make perfect monster tongues so keep the green tops on.
  • 1 tablespoon lemon juice: it keeps apples from browning so toss it in gently.

Method
 

  1. Rinse all the vegetables and fruits under cool water. Pat them very dry with paper towels so the tray stays crisp. Wet produce slides around and makes the dip watery, so this step matters.
  2. Slice the cucumbers into thin rounds and cut the celery into small chunks. Halve the cherry tomatoes if you like, and cut the broccoli into small florets. Keep the baby carrots whole, since they need no prep at all.
  3. Peel and segment the oranges, then slice the apples and toss them with lemon juice. Wash the grapes and strawberries and pat them dry. Hold the banana back, because it browns fast and should be sliced last.
  4. Spread the baby carrots across the center of your tray until the whole round shape looks orange. Don't worry if some carrots sit a little crooked. A slightly messy pumpkin still looks wonderfully spooky.
  5. Place the celery chunks at the top for the stem. Set the mini bell pepper in the middle as the nose. Arrange the cucumber rounds below it in a wide, grinning jack-o'-lantern smile.
  6. Spoon the hummus into two small bowls and place them above the nose as glowing eyes. Add the ranch dip in a third bowl at the side for variety. For a spider veggie tray twist, top one bowl with olive slices shaped like a spider.
  7. Thread orange segments, green grapes, and purple grapes onto skewers for bright Halloween colors. Slice the banana and tuck it with the apples around the tray edge. Finish with strawberries so their tips look like silly monster tongues.
  8. Tuck the broccoli, snap peas, and tomatoes into the open spaces. Check the tray from a few steps back and fill any bare spots. Serve right away or chill it until the party starts

Notes

  • I dry every vegetable well, because wet produce makes the tray look sloppy and soggy.
  • I cut the apples last and toss them in lemon juice, so they stay fresh-looking for hours.
  • I use plenty of kid-friendly veggies like carrots, peppers, and cucumbers, since my kids always grab those first.
  • I let the kids place the cucumber smile, and the lopsided grin always becomes the favorite part.
  • I choose a dip with simple, real ingredients, because adults and kids both go back for seconds.
