Halloween Ghost Cupcakes Recipe

I still remember the first Halloween I made these ghost cupcakes for my kid's class party, and I was shocked at how little effort they actually took. I'd seen ghost cupcakes marshmallow versions all over Pinterest and assumed they needed some kind of baking skill I didn't have, but this one is really just a clever assembly.

Ingredients
  

  • 2 pounds white fondant – this becomes the ghost's body so buy the smooth, pliable kind sold at craft stores, not the stiff gum paste
  • Cornstarch for dusting – keeps the fondant from sticking to your hands and rolling pin while you work
  • 12 baked cupcakes with chocolate frosting – homemade or store-bought both work just make sure the tops are flat and evenly frosted
  • 12 small lollipops I use Dum-Dums – these give the fondant ghost its shape and act as the "spine" that stands it up
  • 1 small tube black decorating gel – perfect for piping small neat dots for the ghost eyes

Method
 

  1. Dust your counter and rolling pin lightly with cornstarch so nothing sticks while you work. Roll half of the fondant into a large circle that's about as thick as a nickel. Using your cookie cutter, cut out as many circles as you can, then gather the scraps and re-roll them until you've got 12 total.
  2. Spread a generous, smooth layer of chocolate frosting over each cupcake top. I always make sure this layer is level, because it gives the fondant ghost a flat, stable base to sit on instead of sliding around later.
  3. Lay one fondant circle over each lollipop and gently drape it down like a little sheet, smoothing it around the stick with your fingers. Press lightly near the base so the fondant hugs the lollipop and forms that classic rounded ghost silhouette.
  4. Push each ghost lollipop straight down into the center of a frosted cupcake until it stands up on its own. Finish by squeezing two small dots of black decorating gel onto the fondant for eyes, then step back and admire your little Halloween army.

Notes

  • I always knead my fondant for a minute before rolling it, since cold fondant cracks instead of stretching smoothly.
  • I keep a small bowl of cornstarch nearby the whole time, because fondant gets sticky fast in a warm kitchen.
  • I frost the cupcakes first and let that sit for a few minutes so it firms up slightly before I push the lollipop in.
  • I've found chilling the shaped ghosts for five minutes before assembling makes the fondant hold its form better.
  • I always keep a few extra lollipops on hand in case one snaps while I'm inserting it.
