I made this Hatch Green Chili Chicken Soup Recipe on a Sunday afternoon when the weather finally turned cool, and honestly, my kitchen has never smelled better. I had a bag of frozen Hatch chiles from a farmers market haul sitting in my freezer, and I knew they belonged in a big pot of something warm and comforting.

Ingredients
  

  • 2 tablespoons olive oil – helps soften the onion and garlic without sticking
  • 1 medium yellow onion diced – builds the savory base of the broth
  • 3 cloves garlic minced – adds warmth and depth to every spoonful
  • 1 lb boneless skinless chicken thighs – stays juicier than breast meat after simmering
  • 1 ½ cups roasted Hatch green chiles chopped – the star flavor, so don't skip fresh or frozen roasted ones
  • 1 teaspoon ground cumin – gives the broth that earthy Southwestern warmth
  • ½ teaspoon smoked paprika – adds a subtle smoky note without extra heat
  • ½ teaspoon dried Mexican oregano – brings a slightly citrusy herbal touch
  • 4 cups low-sodium chicken broth – lets you control the saltiness better than regular broth
  • 1 can 15 oz white beans, drained – adds heartiness and pairs beautifully with green chile
  • 1 cup corn kernels fresh or frozen – a touch of sweetness that balances the chile heat
  • Juice of 1 lime – brightens the whole pot right before serving

Method
 

  1. Heat the olive oil in your stockpot over medium heat, then add the diced onion. Cook for about 4 minutes until it turns soft and slightly golden. Stir in the garlic during the last minute so it doesn't burn and turn bitter.
  2. Sprinkle in the cumin, smoked paprika, and Mexican oregano, stirring for about 30 seconds until fragrant. Add the chopped Hatch green chiles right after so the spices coat them evenly. This step is where the whole kitchen starts to smell incredible.
  3. Pour in the chicken broth and drop in the raw chicken thighs whole. Bring the pot to a gentle boil, then reduce to a simmer and cover for about 20 minutes. The chicken should be fully cooked through and easy to shred with a fork.
  4. Remove the chicken thighs and shred them using two forks or tongs. Return the shredded meat back into the pot so it soaks up all that green chile broth. This keeps the chicken tender instead of drying out.
  5. Stir in the drained white beans and corn kernels, letting the soup simmer uncovered for another 8-10 minutes. This step thickens the broth slightly and adds nice texture contrast. The beans also make the soup more filling for a full meal.
  6. Turn off the heat and squeeze in the fresh lime juice, stirring well to combine. Taste the broth and adjust salt and pepper as needed. This final touch of acidity really wakes up all the smoky, earthy flavors.
