Herb-Crusted Chicken Cutlets Recipe

I started making these herb crusted chicken cutlets on a weeknight when I had nothing planned and a craving for something crunchy, and they've stuck around in my rotation ever since. The herby panko coating gets shatteringly crisp while the chicken underneath stays juicy, which is exactly what I want from a breaded chicken cutlet recipe.

Ingredients
  

  • 4 chicken cutlets — thin evenly pounded pieces cook faster and more evenly than thick chicken breasts
  • ⅓ cup all-purpose flour — the first coating layer that helps the egg wash stick to the chicken
  • kosher salt and freshly ground black pepper to taste — season every layer, not just the chicken itself
  • 1 large egg — whisked with milk this is what the breadcrumbs cling to
  • ¼ cup milk — loosens the egg so it coats the chicken evenly instead of clumping
  • 1 cup panko breadcrumbs — panko stays crunchier than regular breadcrumbs since it's lighter and flakier
  • 1 tablespoon fresh oregano chopped — adds an earthy, slightly peppery note to the crust
  • 1 tablespoon fresh rosemary chopped — use fresh here, dried rosemary can taste woody and sharp
  • 1 teaspoon fresh thyme chopped — a subtle, almost lemony herb that rounds out the blend
  • flaky sea salt for finishing — a light sprinkle right after cooking makes the crust pop
  • 3 tablespoons salted butter — adds richness and helps the coating turn deep golden brown
  • 3 tablespoons vegetable oil — keeps the butter from burning while the chicken fries

Method
 

  1. Place your chicken cutlets between two sheets of plastic wrap and pound them with a mallet until they're an even thickness throughout. This step matters because uneven cutlets cook unevenly, leaving thin edges dry while the center stays underdone.
  2. Add the flour to one shallow dish and season it with salt and pepper. In a second dish, whisk together the egg and milk until smooth. In the third dish, combine the panko with the chopped oregano, rosemary, and thyme.
  3. Dredge each cutlet first in the seasoned flour, shaking off any excess. Dip it into the egg mixture, letting the extra drip away, then press it firmly into the herby panko so the coating sticks on all sides.
  4. In a large skillet over medium heat, melt the butter together with the vegetable oil. Let the mixture heat until it's shimmering but not smoking, since this combination gives you rich flavor without burning too quickly.
  5. Add the breaded cutlets to the skillet and cook for 3 to 4 minutes per side, until deeply golden and crisp. Avoid overcrowding the pan, and work in batches if needed so each cutlet gets even contact with the heat.
  6. Transfer the cooked cutlets to a wire rack so the bottoms stay crisp instead of steaming. Sprinkle with a little flaky sea salt right away, then let them rest for a couple of minutes before slicing or serving.
