Honey Lime Chicken & Avocado Rice Bowl Recipe

I made this honey lime chicken and avocado rice bowl on a random Tuesday when I had nothing planned for dinner, and it's basically lived in my weekly rotation ever since. I love how the sticky-sweet lime marinade soaks into the chicken while it grills, and I love it even more piled over warm rice with cool, creamy avocado on top

Ingredients
  

  • 1.5 lbs boneless chicken thighs – thighs stay juicier than breast here and soak up the marinade better
  • cup olive oil – helps the spices stick and keeps the chicken from drying out on the grill
  • 1 tablespoon paprika – gives the chicken that warm golden color once it chars
  • 1 tablespoon salt – season generously here it's doing a lot of the flavor work
  • 1 tablespoon onion powder – adds depth without any actual onion pieces to bite into
  • 1 tablespoon garlic powder – layers in savory flavor alongside the fresh garlic
  • 1 teaspoon ground cumin – a small amount adds a nice earthy smoky note
  • ½ teaspoon red chili flakes – adjust up or down depending on how much heat you like
  • 2 garlic cloves grated – fresh garlic gives a sharper punch than powder alone
  • 1 tablespoon honey – this is what caramelizes into those sticky charred edges
  • Freshly cracked black pepper – always crack it fresh pre-ground pepper loses its bite fast
  • 2 limes juiced and zested – use fresh limes only, bottled juice tastes flat here
  • 2 cups cooked white rice – jasmine or basmati both work beautifully
  • cups chicken or vegetable broth – cooking rice in broth instead of water adds way more flavor
  • ½ cup pickled onions – the tang cuts through the richness of the avocado and honey
  • 2 tablespoons fresh cilantro chopped – skip dried cilantro, it just doesn't have the same brightness
  • 4 mini cucumbers sliced – adds a cool, crisp crunch to balance the warm chicken
  • 2 ripe avocados sliced – choose ones that give slightly when pressed, not mushy or rock hard
  • For the Honey Lime Dressing
  • ½ cup olive oil – forms the smooth pourable base of the dressing
  • 1 tablespoon red wine vinegar – brings a light tang that balances the honey's sweetness
  • 1 tablespoon Dijon mustard – helps emulsify the dressing so it doesn't separate
  • 1 tablespoon honey – the same honey-lime combo as the marinade tying the bowl together
  • 1 teaspoon salt – taste and adjust once everything's whisked together
  • ½ teaspoon red chili flakes – for a gentle background heat in every drizzle
  • Freshly cracked black pepper – finish the dressing with one more crack for aroma
  • 1 garlic clove grated – just enough to round out the dressing without overpowering it
  • 1 lime juiced and zested – the zest carries even more citrus punch than the juice alone
  • 2 tablespoons cilantro chopped – stir in right before serving so it stays vibrant green

Method
 

  1. I whisk the olive oil, paprika, salt, onion powder, garlic powder, cumin, chili flakes, grated garlic, honey, black pepper, and lime zest and juice together in a large bowl first. Then I add the chicken thighs and toss until every piece is fully coated. I let it sit for at least 30 minutes, though I've gone up to 4 hours when I want a deeper, punchier flavor.
  2. While the chicken marinates, I rinse the rice under cold water to remove excess starch. I cook it in the broth instead of plain water, bringing it to a boil, then covering it and dropping the heat to low. Once it's fluffy, I let it rest covered for 5 minutes before fluffing with a fork.
  3. Once my grill or grill pan is hot, I cook the marinated chicken thighs on each side until they're golden and cooked through, brushing on a little extra marinade as they cook. I always let the chicken rest for a few minutes before slicing, so the juices redistribute instead of spilling out onto the cutting board.
  4. In a small jar, I combine the olive oil, red wine vinegar, Dijon, honey, salt, chili flakes, black pepper, grated garlic, lime zest and juice, and chopped cilantro. I whisk or shake it until it's smooth and slightly thickened, tasting once to check the balance of sweet and tangy.
  5. I start each bowl with a warm base of rice, then layer on the sliced chicken, cucumbers, avocado, cilantro, and pickled onions. I finish everything with a generous drizzle of the honey lime dressing right before serving, while the chicken is still warm.

Notes

  • I always marinate overnight when I remember to plan ahead, and the flavor difference is noticeable.
  • I slice my avocado at the very last second, since it browns fast once it's cut open.
  • I double the dressing recipe now because I use leftovers on salads all week long.
  • I let the chicken rest a full 5 minutes before slicing, it keeps every piece juicy instead of dry.
  • I toast the rice for a minute in the dry pot before adding broth, it adds a subtle nutty flavor.
