  • 1 cup cooked rice white or brown – day-old rice holds up better for stacking.
  • ¼ cup fresh coriander chopped – brings a burst of freshness.
  • 1 tablespoon lime juice – enhances the brightness of the rice.
  • Salt to taste – balances the flavors.
  • 2 ripe avocados sliced – should be slightly soft but not mushy.
  • 1 tablespoon lime juice – prevents browning and adds zing.
  • Salt and pepper to taste – simple seasoning for creamy avocado.

Method
 

  1. Season your chicken breasts with salt and pepper. Mix honey, lime juice, lime zest, and garlic in a small bowl. Cook chicken in a lightly oiled pan for 6–7 minutes per side, brushing with glaze in the last 2 minutes for that caramelized finish.
  2. Combine cooked rice with chopped coriander and lime juice. Season with salt and stir until the rice is bright and fragrant. This layer adds freshness and balances the richness of chicken and avocado.
  3. Slice avocados and toss gently with lime juice, salt, and pepper. This keeps the slices from browning while enhancing their natural creamy flavor.
  4. Place a ring mold on your plate. Press rice at the bottom, layer avocado slices next, and top with sliced chicken. Carefully lift the mold and drizzle any remaining glaze for a professional look.
