Hot Honey Lemon Chicken Recipe

I started making this hot honey lemon chicken on nights when I wanted something sweet, spicy, and tangy all at once, and now I honestly can't go back to plain lemon chicken. I love how the sauce turns glossy and clings to every piece of chicken, with just enough chili heat to keep things interesting.

Ingredients
  

  • 2 large chicken breasts sliced into thin cutlets — slicing them thin helps the chicken cook fast and evenly
  • ¼ cup plain flour — coats the chicken for a light crust that helps the sauce stick
  • ½ teaspoon garlic powder — adds a quick layer of savory flavor to the coating
  • Salt and black pepper to taste — season generously, it makes a real difference in the final bite
  • 2 tablespoons olive oil — for pan-searing the chicken until golden
  • 1 tablespoon unsalted butter — adds richness to the sauce at the end
  • 2 cloves garlic minced — fresh garlic brings a punch of flavor the sauce needs
  • ½ cup chicken stock — builds the base of the glossy pan sauce
  • 4 tablespoons fresh lemon juice — skip the bottled stuff fresh juice makes a huge difference here
  • 3 tablespoons honey — balances the heat and lemon with natural sweetness
  • 1 to 2 teaspoons chili flakes or hot sauce — this is what gives the dish its hot honey kick adjust to taste
  • 1 lemon sliced into half-moons — adds color and extra citrus flavor as it simmers in the sauce
  • 2 tablespoons chopped parsley — a fresh herby finish right before serving

Method
 

  1. Slice each chicken breast in half horizontally to create thinner cutlets, then gently pound them to an even thickness with a mallet. This step keeps the chicken from drying out and helps it cook quickly and evenly in the pan.
  2. In a shallow dish, mix the flour, garlic powder, salt, and pepper. Press each chicken cutlet into the mixture, coating both sides lightly and shaking off any excess before setting it aside.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 3 to 4 minutes per side, until golden brown and just cooked through, then transfer it to a plate.
  4. In the same skillet, melt the butter and add the minced garlic, stirring for about 30 seconds until fragrant. Pour in the chicken stock, lemon juice, honey, and chili flakes, then add the lemon slices and let everything simmer for a couple of minutes.
  5. Return the chicken to the pan, spooning the sauce over each piece so it gets fully coated. Let it simmer gently for another minute or two until the sauce thickens slightly and clings to the chicken.
  6. Sprinkle the finished dish with freshly chopped parsley right before taking it to the table. The bright green flecks against that sticky amber glaze make it look every bit as good as it tastes.

Notes

  • I always use fresh lemon juice instead of bottled, since it genuinely changes how bright the sauce tastes.
  • I like to taste the sauce before adding the chicken back in, so I can adjust the honey or chili to my liking.
  • I never rush the searing step, because getting good color on the chicken adds so much flavor to the final dish.
  • I keep a small bowl of extra chili flakes on the side for anyone at the table who wants it spicier.
  • I let the sauce simmer just a touch longer than I think I need to, since it thickens more than expected once it cools slightly.
