Key Lime Colada Recipe

I still remember the first time I made this Key Lime Colada—it instantly felt like a mini vacation in a glass. The balance of tangy lime and creamy coconut completely won me over. I was surprised at how easy it was to blend everything together into something so refreshing. It’s the kind of drink that makes you pause and enjoy the moment.
Total Time 10 minutes
Servings: 2

Ingredients

  • 1 cup frozen pineapple chunks
  • ½ cup cream of coconut
  • ¼ cup fresh key lime juice
  • ¼ cup white rum
  • ½ cup ice cubes
  • 2 tablespoons simple syrup optional
  • Lime slices and toasted coconut for garnish

Method

  1. Start by gathering and measuring all your ingredients. Make sure your pineapple is frozen and your lime juice is freshly squeezed. Having everything ready makes blending quick and easy.
  2. Add the frozen pineapple, cream of coconut, lime juice, rum, and ice into your blender. Blend on high speed until the mixture becomes smooth and creamy. Scrape down the sides if needed to ensure everything is well combined.
  3. Taste your colada and decide if it needs a little extra sweetness. Add simple syrup if desired and blend again briefly. You can also add more lime juice if you prefer a tangier kick.
  4. Pour the mixture into chilled glasses for the best experience. Garnish with lime slices and toasted coconut for a tropical presentation. Serve right away while it’s cold and refreshing.

Notes

  • I always use fresh key lime juice—it makes a huge difference in taste compared to bottled.
  • I like to chill my glasses beforehand; it keeps the drink colder longer.
  • If the drink feels too thick, I add a splash of pineapple juice to loosen it.
  • I’ve found that balancing sweetness and tartness is key, so I always taste before serving.
  • Toasting the coconut for garnish adds a subtle crunch and deeper flavor that I love.
