Lemon Basil Marinated Mozzarella Balls Recipe

Ingredients
  

  • 1 pound mozzarella balls ciliegine or cherry-sized mozzarella – Their bite-sized shape makes them perfect for marinating and serving.
  • 3/4 cup extra virgin olive oil – Use high-quality olive oil since it forms the base of the marinade.
  • 1 teaspoon minced garlic about 2 cloves – Fresh garlic provides the best flavor and aroma.
  • 1/4 cup fresh basil finely chopped – Fresh basil adds a bright and classic Italian taste.
  • 4 teaspoons lemon zest – Gives the cheese a fresh citrus fragrance without making it too acidic.
  • 1/4 cup fresh lemon juice – Freshly squeezed juice delivers the cleanest flavor.
  • 1/2 teaspoon red pepper flakes – Adds a subtle kick and balances the richness of the cheese.
  • 1/2 teaspoon kosher salt – Enhances all the other flavors in the marinade.
  • Crostini crackers, or crusty bread for serving – Perfect for scooping up the flavorful cheese and oil.

Method
 

  1. Start by draining the liquid from the mozzarella balls completely. Gently pat them dry with paper towels so the marinade can cling better to the cheese. Place the mozzarella into a large glass jar or bowl.
  2. In a separate bowl, combine the olive oil, minced garlic, chopped basil, lemon zest, lemon juice, red pepper flakes, and kosher salt. Whisk everything together until fully combined. The mixture should smell fresh and citrusy.
  3. Pour the prepared marinade over the mozzarella balls. Stir gently to ensure every piece of cheese is coated in the flavorful oil mixture. Make sure the herbs and seasonings are evenly distributed.
  4. Cover the container tightly and place it in the refrigerator. Allow the mozzarella to marinate for at least one hour. For the richest flavor, let it sit overnight so the ingredients have time to fully infuse.
  5. Before serving, remove the mozzarella from the refrigerator and let it sit on the counter for about 20 to 30 minutes. This helps restore the creamy texture and improves the flavor of the cheese.
  6. Transfer the marinated mozzarella balls to a serving dish. Spoon some of the flavorful oil and herbs over the top. Serve with crackers, crostini, or slices of crusty bread for the perfect appetizer

Notes

  • I always use fresh basil instead of dried because the flavor is brighter and more aromatic.
  • I prefer letting the mozzarella marinate overnight since the cheese absorbs much more flavor.
  • I stir the mozzarella once or twice while it marinates to coat every piece evenly.
  • I use freshly squeezed lemon juice because bottled juice can taste slightly bitter.
  • I always serve the cheese at room temperature because it becomes softer and creamier.
  • I save the leftover herb oil and use it as a bread dip the next day.
