Ingredients
  

  • 2 boneless skinless chicken breasts – Use fresh chicken for the juiciest texture and best flavor.
  • 2 tablespoons olive oil – Helps keep the chicken moist while grilling.
  • 2 tablespoons fresh lemon juice – Freshly squeezed juice provides a brighter taste than bottled varieties.
  • 2 cloves garlic minced – Adds depth and savory flavor to the marinade.
  • 1 teaspoon dried oregano – Brings a classic herb flavor that pairs perfectly with lemon.
  • 1 teaspoon dried thyme – Adds an earthy aroma to the chicken.
  • ½ teaspoon salt – Enhances all the flavors.
  • ¼ teaspoon black pepper – Adds a mild kick.
  • 2 large heads romaine lettuce chopped – Crisp romaine creates the traditional Caesar salad texture.
  • 1 cup homemade or store-bought croutons – Adds crunch and contrast.
  • ½ cup freshly grated Parmesan cheese – Freshly grated cheese melts better into the salad and offers richer flavor.
  • cup Caesar dressing – Use your favorite homemade or quality store-bought dressing.
  • 1 tablespoon extra lemon juice – For finishing and extra freshness.
  • Lemon wedges for serving – Optional but highly recommended.

Method
 

  1. In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Stir well until everything is evenly blended.
  2. The lemon and herbs work together to create a bright, flavorful marinade. This mixture helps tenderize the chicken while infusing it with fresh flavor.
  3. Place the chicken breasts into the marinade and coat them thoroughly. Let them rest for at least 20 to 30 minutes.
  4. Allowing the chicken to marinate gives it more flavor and helps keep it juicy during grilling. Longer marinating times can enhance the taste even further.
  5. Heat your grill or grill pan over medium-high heat. Lightly oil the cooking surface to prevent sticking.
  6. A properly heated grill creates beautiful grill marks and seals in the juices. This step is important for achieving tender chicken.
  7. Place the marinated chicken on the hot grill. Cook for about 6 to 7 minutes per side until fully cooked.
  8. The outside should develop a light char while the inside remains moist and tender. The internal temperature should reach 165°F (74°C).
  9. Transfer the grilled chicken to a cutting board and allow it to rest for 5 minutes. This helps the juices redistribute throughout the meat.
  10. After resting, slice the chicken into thin strips. Thin slices make the salad easier to eat and help distribute flavor evenly.
  11. Wash and dry the romaine lettuce thoroughly. Chop it into bite-sized pieces and place it in a large salad bowl.
  12. Dry lettuce helps the dressing cling better to the leaves. Crisp lettuce also provides the signature Caesar salad crunch.
  13. Add Caesar dressing to the lettuce and gently toss until all leaves are lightly coated. Avoid overmixing.
  14. The goal is to evenly distribute the dressing without making the salad soggy. Every bite should have a balanced flavor.
  15. Top the dressed lettuce with sliced grilled chicken, croutons, and freshly grated Parmesan cheese.
  16. Layering the ingredients keeps the textures distinct and creates a visually appealing presentation.
  17. Drizzle a little fresh lemon juice over the top and garnish with lemon wedges if desired.
  18. Serve immediately while the chicken is still slightly warm. The contrast between warm chicken and cool lettuce is incredibly satisfying.
