Mango Yogurt Parfait With Coconut Crunch Recipe

I made this mango yogurt parfait on a warm afternoon when I was craving something light, fruity, and refreshing. I wanted a dessert that felt indulgent but still healthy enough to enjoy without guilt. As I layered everything together, the colors alone made me excited to dig in. The sweet mango, creamy yogurt, and crunchy coconut turned out to be a perfect match

Ingredients
  

  • fresh ripe mangoes 1 ½ to 2 cups, diced – Choose sweet, non-fibrous mangoes for best texture and natural sweetness.
  • Greek yogurt or thick plain yogurt 2 cups – Use strained yogurt for a rich, creamy consistency that holds layers well.
  • honey or maple syrup 2–3 tablespoons – Adds natural sweetness; adjust depending on mango ripeness.
  • vanilla extract 1 teaspoon – Enhances the yogurt flavor and balances tartness.
  • coconut flakes ½ cup – Lightly toasted for a deep nutty aroma and crunch.
  • rolled oats or granola ½ cup – Provides texture contrast and makes the parfait more filling.
  • chopped nuts ¼ cup, almonds or cashews – Optional but adds healthy fats and crunch.
  • chia seeds 1 tablespoon – Helps thicken layers slightly and adds nutrition.

Method
 

  1. I start by adding thick yogurt into a bowl and whisking it until smooth. Then I mix in honey and vanilla to give it a lightly sweet, aromatic flavor. This becomes the creamy base that holds all the layers together perfectly.
  2. Next, I peel and chop ripe mangoes into small juicy cubes. I also toast coconut flakes lightly until golden for a nutty aroma. Granola and nuts are kept ready to build texture in the parfait.
  3. I begin layering yogurt, mango, and crunchy elements in a glass. Each layer is repeated until the glass is full and visually appealing. Finally, I top it with coconut crunch and a few mango pieces for garnish.

Notes

  • I always use chilled yogurt because it makes the dessert more refreshing.
  • I prefer very ripe mangoes since they reduce the need for extra sweeteners.
  • Toasting coconut is something I never skip—it adds deep flavor and crunch.
  • I sometimes chill the assembled parfait for 10–15 minutes for better texture.
  • I like adding a pinch of sea salt to balance sweetness and enhance flavor.
