Mediterranean Glow Chicken Recipe

Ingredients
  

  • 1 large grilled chicken breast chopped – Freshly grilled chicken stays juicy and absorbs Mediterranean seasonings beautifully.
  • 1/2 cup cherry tomatoes halved – Use ripe tomatoes for the best natural sweetness.
  • 1/2 cup cucumber chopped – Fresh cucumber adds crunch and cooling freshness.
  • 1/4 red onion finely diced – Adds a mild sharpness and vibrant color.
  • 1/4 cup chickpeas drained and rinsed – Provides extra protein and a satisfying texture.
  • 1/4 cup feta cheese crumbled – Use a block of feta and crumble it yourself for the best flavor.
  • 2 tablespoons hummus or tzatziki sauce – Creates a creamy tangy element in the bowl.
  • 1 tablespoon olive oil – Extra virgin olive oil offers the richest Mediterranean flavor.
  • 1 tablespoon lemon juice – Fresh lemon juice is far better than bottled.
  • 1 tablespoon chopped fresh parsley – Adds brightness and freshness.

Method
 

  1. Season the chicken breast with salt, pepper, olive oil, and your favorite Mediterranean herbs. A little oregano and garlic powder work especially well here.
  2. Cook the chicken on a grill pan or skillet over medium-high heat until fully cooked. Allow it to rest for a few minutes before slicing.
  3. Slice the chicken into bite-sized pieces. Resting the meat first helps keep the juices locked inside.
  4. Wash the cucumber, cherry tomatoes, parsley, and red onion thoroughly. Fresh vegetables are the key to achieving the signature "glow bowl" freshness.
  5. Dice the cucumber, halve the tomatoes, and finely chop the onion. Keep the pieces relatively uniform for easy eating.
  6. Place all vegetables into a large mixing bowl. This makes assembly much quicker later.
  7. Spoon hummus or tzatziki into a small bowl. If desired, add a squeeze of fresh lemon juice for extra brightness.
  8. Stir until smooth and creamy. The sauce should be thick enough to coat ingredients without becoming runny.
  9. Set aside while assembling the remaining ingredients. This allows the flavors to blend together.
  10. Start by adding the chopped vegetables to each serving bowl. Spread them evenly to create a colorful base.
  11. Add the chickpeas and crumbled feta cheese over the vegetables. These ingredients provide protein, texture, and richness.
  12. Arrange the sliced chicken neatly on top. The warm chicken contrasts beautifully with the cool vegetables.
  13. Drizzle the hummus or tzatziki sauce over the assembled bowl. A little goes a long way.
  14. Sprinkle chopped parsley and sliced olives across the top. These ingredients add authentic Mediterranean character.
  15. Finish with a drizzle of olive oil and a squeeze of lemon juice. Serve immediately for the freshest flavor.

Notes

  • I always let the chicken rest for at least 5 minutes before slicing because it stays much juicier.
  • I prefer using fresh lemon juice instead of bottled juice because the flavor is noticeably brighter.
  • I like chilling the vegetables for 15 minutes before assembling the bowl for extra freshness.
  • I found that crumbling feta from a block tastes much better than pre-crumbled feta.
  • I sometimes add a pinch of smoked paprika to the chicken for extra depth.
  • I use extra parsley when serving because it adds wonderful freshness and color.
