Place the fillets skin-side down on the baking sheet. Drizzle olive oil evenly over the fish. Sprinkle salt and black pepper, then spread minced garlic on top for full flavor.
Arrange lemon slices over each fillet. Place rosemary, thyme, and oregano sprigs on top. Pour the white wine around the fish in the pan, not directly over it.
Bake in the preheated oven for about 25 minutes. The fish is ready when it flakes easily with a fork. Let it rest for a few minutes before serving.
