Ingredients
  

  • 4 branzino fillets about 6 oz each – Fresh fillets give the best texture and mild flavor.
  • 2 tablespoons olive oil – Adds moisture and richness while helping herbs stick.
  • 4 garlic cloves minced – Fresh garlic provides bold Mediterranean flavor.
  • 1 lemon thinly sliced – Brings brightness and natural acidity.
  • 2 sprigs fresh rosemary – Adds earthy aroma.
  • 4 sprigs fresh thyme – Enhances the herbal profile.
  • 1 sprig fresh oregano – Classic Mediterranean taste.
  • Salt to taste – Elevates overall flavor.
  • Freshly ground black pepper to taste – Adds gentle heat.
  • 1/4 cup dry white wine – Keeps the fish moist and adds depth.

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat the branzino fillets dry using paper towels to remove excess moisture. This step helps achieve better texture.
  2. Place the fillets skin-side down on the baking sheet. Drizzle olive oil evenly over the fish. Sprinkle salt and black pepper, then spread minced garlic on top for full flavor.
  3. Arrange lemon slices over each fillet. Place rosemary, thyme, and oregano sprigs on top. Pour the white wine around the fish in the pan, not directly over it.
  4. Bake in the preheated oven for about 25 minutes. The fish is ready when it flakes easily with a fork. Let it rest for a few minutes before serving.

Notes

  • I always use fresh herbs instead of dried — it makes the flavor brighter.
  • Patting the fish completely dry improves texture.
  • I prefer pouring wine around the fish to keep seasonings intact.
  • Letting the fish rest briefly before serving enhances taste.
  • Adding extra lemon zest right before serving boosts freshness.
