Oktoberfest Chicken Thighs Recipe

I first made this Oktoberfest chicken thigh recipe on a chilly October evening when I wanted something that felt like a trip to Bavaria without leaving my kitchen. I had a head of red cabbage sitting in my fridge and a craving for something sweet, savory, and a little tangy all at once.

Ingredients
  

  • 4 slices bacon — renders the fat you'll braise everything in so don't skip it for flavor
  • 1 tablespoon bacon drippings — reserved from cooking the bacon this carries smoky flavor through the whole dish
  • ¼ cup all-purpose flour — coats the chicken thighs for a light crust before searing
  • ½ teaspoon kosher salt — seasons the flour coating and the cabbage as it cooks
  • ½ teaspoon smoked paprika — adds warmth and a subtle smokiness that pairs beautifully with cabbage
  • 2 pounds skinless chicken thighs — the star of this chicken thighs with red cabbage dish and they stay juicy through braising
  • 1 red onion sliced — softens into the cabbage mixture and adds natural sweetness
  • 1 large apple cored and sliced — brings a fruity balance that plays off the tangy vinegar

Method
 

  1. Preheat your oven to 350°F. Place the bacon slices in a large oven-safe skillet over medium-high heat and cook until evenly browned, about 10 minutes. Drain the bacon on paper towels, then crumble it once cool, leaving the drippings behind in the skillet.
  2. Whisk the flour, kosher salt, and smoked paprika together in a bowl until combined. Coat each chicken thigh evenly in this mixture, then cook the coated pieces in the bacon drippings until browned on both sides, about 5 minutes per side. Transfer the chicken to a plate once done.
  3. Drain all but a tablespoon of the grease from the skillet. Add the sliced red onion and apple, and cook, stirring occasionally, until the onion turns translucent and the apple softens, roughly 5 minutes. This step builds the sweet base for your cabbage.
  4. Stir the sliced red cabbage and crumbled bacon into the onion and apple mixture. Season lightly with salt and cook, stirring often, until the cabbage begins to soften and wilt down, about 5 to 8 minutes.
  5. Pour in the red wine vinegar and dry red wine, then stir in the brown sugar and cinnamon if using. Bring everything to a boil and let it cook, stirring occasionally, until the liquid reduces by about half, roughly 10 minutes.
  6. Nestle the seared chicken thighs on top of the cabbage mixture in the skillet. Transfer the whole pan to your preheated oven and bake until the cabbage is fully tender and the chicken reaches an internal temperature of 165°F, about 40 minutes.

Notes

  • I always slice my cabbage thin so it braises evenly and doesn't stay tough in the center.
  • I like patting my chicken thighs dry before coating them in flour, since this helps the coating stick better and gives a nicer sear.
  • I never rush the reduction step, since letting the vinegar and wine cook down properly is what gives the sauce its depth.
  • I sometimes add a splash of chicken broth if my cabbage looks too dry partway through baking.
  • I always taste the cabbage before adding the chicken back in, adjusting the salt or sugar if it needs it.
