Method
 

  1. Start by pitting and roughly chopping the dates if they aren’t already soft. This helps them cook evenly and absorb flavors better. Keeping pieces slightly chunky adds a nice texture.
  2. Warm olive oil in a skillet over medium heat until it gently shimmers. Avoid overheating, as it can affect the flavor. A gentle heat allows the oil to infuse the dates properly.
  3. Add the dates to the skillet and stir gently. Let them cook until they soften and start to caramelize slightly. This step brings out their natural sweetness beautifully.
  4. Pour in honey or maple syrup along with cinnamon, salt, and vanilla extract. Stir everything together so the dates get coated in a glossy, flavorful mixture. Let it cook for another minute.
  5. Scoop vanilla ice cream into serving bowls while the dates are still warm. Spoon the sautéed dates over the ice cream for that perfect hot-and-cold contrast. The melting effect is part of the magic.
