I start by patting the chicken pieces dry with a paper towel, since excess moisture keeps the coating from sticking well. Then I cut the breast into even, bite-sized nugget shapes so everything cooks at the same rate. A light tap with a mallet on any thicker pieces keeps the texture consistent throughout.
I line up three shallow bowls: one with flour, one with beaten eggs, and one with the parmesan-breadcrumb mixture. Combining the panko, parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper in that third bowl ahead of time saves me from fumbling mid-process. This setup keeps my hands cleaner and the whole breading step much faster.
I dip each piece of chicken into the flour first, tapping off the excess so it doesn't clump. Next, I dunk it into the egg wash, letting any drips fall away before moving on. Finally, I press each piece firmly into the parmesan-breadcrumb mix so the coating really sticks on all sides.
I place the breaded nuggets on a wire rack set over a parchment-lined baking sheet, leaving a little space between each piece. A light drizzle of olive oil or a quick spray on top helps the crust turn a deeper golden brown. I bake them at 400°F for about 18 to 20 minutes, flipping halfway through for even color.
I always check the internal temperature with a thermometer, looking for 165°F at the thickest part. Once they're done, I let the nuggets rest for a minute or two so the juices settle back in. Serving them warm, straight off the rack, is when that parmesan crust tastes the best.
