Pecan Crusted Chicken Recipe

I still remember the first time I pulled a tray of this pecan crusted chicken out of the oven. The smell of toasted pecans and warm spices hit me before I even saw the golden crust. I'd made a hundred versions of breaded chicken before, but something about swapping plain breadcrumbs for crushed pecans changed everything for me

Ingredients
  

  • 4 boneless skinless chicken breasts (or cutlets) — the star of the dish, pound them to an even thickness so they cook evenly
  • 1 ½ cups pecans finely chopped — toast them lightly first if you want an even deeper, nuttier flavor
  • ¾ cup panko or plain breadcrumbs — this lightens the crust and keeps the pecans from turning into a paste
  • 2 large eggs — whisk well this is what helps the crust cling to the chicken
  • 2 tablespoons milk or buttermilk — thins the egg wash so it coats every corner of the chicken
  • ½ cup all-purpose flour — dredging first helps the egg wash stick don't skip this step
  • 1 teaspoon garlic powder — adds savory depth without overpowering the pecans
  • 1 teaspoon smoked paprika — gives the crust a warm color and a subtle smoky note
  • ½ teaspoon dried oregano — a small herby lift that balances the sweetness of the pecans
  • ½ teaspoon salt — season at every layer not just the chicken, for the best flavor
  • ¼ teaspoon black pepper — freshly cracked makes a noticeable difference here
  • 2 tablespoons olive oil or melted butter — brushed on before baking this is the secret to a deep golden crust without frying

Method
 

  1. Start by preheating your oven to 400°F and lining a baking sheet with parchment paper. Place your chicken breasts between two sheets of plastic wrap and gently pound them to about half an inch thick. This keeps the chicken tender and helps it cook at the same speed as the crust browns.
  2. Add the pecans, breadcrumbs, garlic powder, smoked paprika, oregano, salt, and pepper to a food processor. Pulse a few times until you get a fine, even crumb you don't want big chunks, or the coating won't stick well. Pour the mixture into a shallow bowl once it's ready.
  3. In one bowl, add the flour. In a second bowl, whisk together the eggs and milk. In the third bowl, add your pecan crumb mixture. Season the chicken with a pinch of salt and pepper before you start dredging, since this is your only chance to season the meat directly.
  4. Dip each chicken breast into the flour first, shaking off the excess. Then dunk it into the egg wash, letting any extra drip away. Finally, press it firmly into the pecan crumbs so the coating sticks on every side. I always press a little extra at the edges, since that's where crumbs tend to fall off.
  5. Arrange the breaded chicken on your prepared baking sheet, leaving space between each piece. Drizzle or brush the tops lightly with olive oil or melted butter this helps the crust turn a deep golden brown in the oven instead of staying pale. Bake for 20-25 minutes, flipping halfway through if you like extra crispness on both sides.
  6. Use a meat thermometer to check the thickest part of the chicken; it should read 165°F. Let the chicken rest for a few minutes before slicing or serving, since this keeps the juices locked inside instead of running out onto the plate.

Notes

  • I always pound my chicken to an even thickness first it's the single biggest reason my crust used to burn before the inside was cooked.
  • I like to let the breaded chicken sit in the fridge for 10 minutes before baking, since it helps the crust set and stick better.
  • I never skip toasting the pecans lightly beforehand it deepens the flavor more than any spice I add.
  • I use a wire rack on top of my baking sheet whenever I have one, because it keeps the bottom crust just as crisp as the top.
