Pineapple Cucumber Agua Fresca Recipe

I recently tried making this pineapple cucumber agua fresca, and I have to say—it instantly became one of my favorite refreshing drinks. The combination of sweet pineapple and crisp cucumber felt incredibly light and cooling. I made it on a warm afternoon, and it was exactly what I needed to feel refreshed

Ingredients
  

  • pineapple chunks – 3 cups
  • cucumber – 1 large
  • fresh lime juice – 2 tablespoons
  • maple syrup or honey – 1 to 2 tablespoons
  • water – 2 cups
  • ice cubes – 1 cup
  • fresh mint leaves – a handful optional

Method
 

  1. Start by cutting the pineapple into small chunks. Make sure to remove the tough core so the texture stays smooth. If you're using a whole pineapple, peel it carefully and slice it into manageable pieces.
  2. Next, wash the cucumber thoroughly and slice it. I usually leave the skin on for added nutrients and color, but you can peel it if you prefer a milder taste. Fresh lime juice should be squeezed just before using to keep its bright flavor intact.
  3. Taking a few extra minutes to prep everything properly makes blending much easier and ensures the flavors come out clean and fresh.
  4. Add the pineapple chunks, cucumber slices, lime juice, and water into your blender. Blend everything on high speed until the mixture becomes completely smooth. This usually takes about 1–2 minutes depending on your blender.
  5. As I blended mine, I noticed the color turning into a beautiful light green with hints of yellow. The aroma itself is incredibly refreshing. If you prefer a sweeter drink, you can add maple syrup or honey at this stage.
  6. Make sure there are no large chunks left, as a smooth blend makes the final drink more enjoyable.
  7. Once blended, pour the mixture through a fine mesh strainer into a pitcher. Use a spoon to press down the pulp and extract as much liquid as possible. This step helps achieve a light, smooth consistency.
  8. I personally like straining because it gives the drink a cleaner texture, especially when serving guests. However, if you enjoy a bit of fiber and thickness, you can skip this step.
  9. The strained liquid should look vibrant and refreshing, with a smooth, juice-like consistency.
  10. Add ice cubes directly into the pitcher or into individual glasses. Give the agua fresca a quick taste and adjust the sweetness if needed. Sometimes I add a bit more lime juice for extra tang or a touch more sweetener depending on my mood.
  11. If you want the drink extra cold, let it chill in the refrigerator for about 10 minutes before serving. The flavors deepen slightly as it cools, making it even more refreshing.
  12. This is also a great time to add fresh mint leaves for an extra burst of freshness.
  13. Pour the chilled agua fresca into glasses filled with ice. Garnish with a slice of cucumber, pineapple wedge, or a sprig of mint for a beautiful presentation.
  14. When I served this for the first time, everyone loved how light and naturally sweet it tasted. It’s perfect for hot days, brunches, or even as a healthy alternative to sugary drinks.
