Pineapple Dragonfruit Drink Recipe

I recently made this Pineapple Dragonfruit Drink Recipe on a warm afternoon, and it instantly became one of my favorite refreshing beverages. The combination of sweet dragonfruit, tangy lime, and tropical pineapple creates a drink that feels like a mini vacation in a glass. I love how vibrant and colorful it looks, making it perfect for parties, family gatherings, or simply relaxing at home.
Total Time 10 minutes
Servings: 2

Ingredients

  • ½ cup frozen dragonfruit cubes – Frozen dragonfruit gives the drink its beautiful pink color and naturally chilled texture. If using fresh dragonfruit freeze it beforehand for the best results.
  • ½ cup simple syrup cooled – Adds sweetness and helps balance the tartness of the lime juice.
  • 4 fresh limes juiced – Freshly squeezed lime juice provides a bright citrus flavor that enhances the tropical fruits.
  • ¼ cup unsweetened pineapple juice – Fresh or high-quality unsweetened pineapple juice delivers the best tropical flavor.
  • 2 ounces non-alcoholic vodka alternative optional – Adds a cocktail-like feel without alcohol.
  • Lemon-lime soda for topping – Creates a light fizz and refreshing finish.
  • Crushed ice as needed – Keeps the drink cold and adds a pleasant texture.
  • ½ cup water
  • ¼ cup organic cane sugar – Cane sugar dissolves smoothly and creates a clean sweetness.

Method

  1. Combine the water and organic cane sugar in a small saucepan over medium-high heat. Stir continuously until the mixture reaches a gentle boil. Reduce the heat and allow the mixture to simmer briefly until the sugar fully dissolves. Remove from heat and let it cool completely before using. A cooled syrup blends more smoothly into the drink and prevents the ice from melting too quickly.
  2. Wash the limes thoroughly before cutting them in half. Squeeze the juice using a citrus juicer to extract as much liquid as possible. Fresh lime juice provides a bright, natural flavor that bottled juice simply cannot match. The citrus also balances the sweetness of the pineapple. Set the juice aside until you're ready to mix the drink.
  3. Pour the pineapple juice, lime juice, cooled simple syrup, and optional non-alcoholic vodka alternative into a cocktail shaker. Shake vigorously for about 20 seconds until everything is well combined. This helps distribute the flavors evenly throughout the mixture. If you don't have a shaker, whisk the ingredients together in a large mixing bowl.
  4. Fill each serving glass halfway with crushed ice. Add several frozen dragonfruit cubes directly into the glass. The frozen fruit keeps the drink cold while gradually infusing more flavor and color into the beverage. This step also creates the beautiful layered appearance that makes the drink so visually appealing.
  5. Carefully pour the prepared pineapple mixture over the ice and dragonfruit. Divide the liquid evenly between the glasses. Give the drink a gentle stir to allow the dragonfruit color to blend naturally into the beverage. You'll notice the drink developing a stunning tropical pink hue.
  6. Pour lemon-lime soda into each glass until nearly full. The carbonation adds lightness and makes the drink extra refreshing. Avoid over-stirring after adding the soda so you don't lose the fizz. The bubbles help enhance the tropical aroma and overall drinking experience.
  7. Add your favorite garnish such as mint leaves, rosemary sprigs, lime slices, or pineapple wedges. Serve immediately while cold and bubbly. The bright colors make it perfect for entertaining guests or enjoying by the pool. Take a sip and enjoy the refreshing tropical flavors.

Notes

  • I always use freshly squeezed lime juice because it creates a brighter and fresher flavor.
  • I prefer unsweetened pineapple juice since it lets me control the sweetness level.
  • I chill all ingredients before mixing to keep the drink colder for longer.
  • I like adding extra frozen dragonfruit because it intensifies both the color and flavor.
  • I sometimes garnish with fresh mint, which adds an amazing aroma.
  • I gently stir the soda after pouring it in so the drink stays fizzy.
  • I often freeze pineapple juice into ice cubes to prevent dilution.
