Pineapple Kiwi Mojito Recipe

I recently tried making this pineapple kiwi mojito at home, and honestly, it felt like bringing a mini tropical vacation into my kitchen. Ingredients
  

  • 1 cup fresh pineapple chunks
  • 2 ripe kiwis peeled and sliced
  • 10 fresh mint leaves
  • 2 tablespoons lime juice
  • 1 tablespoon sugar or to taste
  • 1 cup club soda
  • ½ cup white rum optional
  • Ice cubes as needed

Method
 

  1. Start by peeling the kiwi and cutting it into small slices. Do the same with the pineapple by chopping it into bite-sized chunks. Fresh fruit works best here because it gives the drink a natural sweetness and vibrant flavor. I’ve tried using canned pineapple before, but fresh always makes a noticeable difference.
  2. Make sure the fruits are ripe, as this enhances the overall taste of the mojito. Ripe kiwi adds a slight tang, while pineapple brings a juicy sweetness that balances everything out perfectly.
  3. Take a sturdy glass or cocktail shaker and add the pineapple chunks, kiwi slices, mint leaves, and sugar. Use a muddler to gently crush everything together. The goal is to release the juices and essential oils without completely pulverizing the ingredients.
  4. As you muddle, you’ll notice the aroma of mint blending beautifully with the fruity scents. This step is crucial because it builds the base flavor of your mojito. Take your time here to ensure all ingredients are well combined.
  5. Once the fruits and mint are properly muddled, pour in the fresh lime juice. This adds a refreshing citrusy kick that enhances the drink’s flavor profile. If you’re making an alcoholic version, now is the time to add white rum.
