Pink Bunny Punch Recipe

I recently made these Sicilian Fig Cookies, and they quickly became one of my favorite homemade treats. The combination of sweet figs, raisins, honey, and crunchy walnuts creates an incredibly rich filling wrapped in a tender pastry dough. Every bite feels like a taste of old-world Italian baking traditions
Total Time 5 minutes
Servings: 1

Ingredients

  • 2 scoops strawberry ice cream – Creates a creamy texture and rich strawberry flavor. Let it soften slightly for easier scooping.
  • ½ cup strawberry lemonade – Adds a bright fruity taste and gives the punch its beautiful pink color.
  • ½ cup lemon-lime soda – Provides refreshing fizz and balances the sweetness.
  • 1 marshmallow bunny candy optional – A fun decorative topping for special occasions.
  • 1 tablespoon mini marshmallows optional – Adds a playful touch and extra sweetness.
  • 1 teaspoon pastel sprinkles optional – Makes the drink look festive and colorful.

Method

  1. Start by placing two scoops of strawberry ice cream into a tall serving glass. Slightly softened ice cream scoops more easily and blends better with the liquids. The ice cream forms the creamy base of the punch.
  2. Slowly pour the strawberry lemonade over the ice cream. As the lemonade mixes with the ice cream, it creates a smooth and fruity flavor. This step also helps develop the punch's signature pink appearance.
  3. Carefully add the lemon-lime soda. Pour slowly because the carbonation reacts with the ice cream and creates a fun bubbly effect. The fizz gives the punch its refreshing texture.
  4. Use a spoon to stir the mixture lightly. Avoid overmixing because you want to keep some of the bubbles intact. The goal is to combine the flavors while maintaining the creamy consistency.
  5. Top the punch with mini marshmallows, pastel sprinkles, and a marshmallow bunny if desired. These simple additions make the drink look festive and party-ready.
  6. Serve the punch right away while the ice cream is still frozen and the soda remains fizzy. The fresh combination of creamy and bubbly textures is what makes this drink so enjoyable.

Notes

  • I always chill the lemonade and soda beforehand so the punch stays cold longer.
  • I pour the soda very slowly to prevent excessive foaming.
  • I like using high-quality strawberry ice cream because it gives a richer flavor.
  • I sometimes freeze fresh strawberry slices and use them instead of ice cubes.
  • I chill serving glasses in the refrigerator for about 10 minutes before serving.
  • I add toppings right before serving to keep them looking fresh and attractive.
