Pumpkin Eclair Cake Recipe

I still remember the first time I made this pumpkin eclair cake for a family potluck. It disappeared in about ten minutes flat. I love that it needs zero oven time, which is a lifesaver when my kitchen is already busy with other fall baking. Every layer of soft graham crackers soaking up that spiced pumpkin filling feels like a warm hug on a plate.

Ingredients
  

  • 2 boxes 3.4 oz each instant vanilla pudding mix – this is what sets the filling without any cooking
  • 3 cups cold whole milk – whisk it in cold so the pudding thickens properly
  • 1 can 15 oz pure pumpkin puree – grab plain pumpkin, not pumpkin pie filling, which is already sweetened
  • 2 teaspoons pumpkin pie spice – this is where all that cozy fall flavor comes from
  • 1 tub 8 oz whipped topping, thawed – folding it in gently keeps the filling light and airy
  • 2 sleeves cinnamon graham crackers – these soften into cake-like layers as the dessert chills
  • 1/2 cup chocolate frosting or ganache melted – a classic eclair-style topping that adds richness
  • A pinch of ground cinnamon for dusting – just for that pretty finishing touch on top

Method
 

  1. In a medium bowl, whisk together the instant pudding mix and cold milk until it starts to thicken, about two minutes. Add the pumpkin puree and pumpkin pie spice, then whisk again until fully combined. Gently fold in the whipped topping with a spatula so the mixture stays light and fluffy.
  2. Arrange a single layer of graham crackers across the bottom of your 9x13-inch dish, breaking pieces to fill any gaps. This base layer is what soaks up the pudding and turns tender as the cake chills. Don't worry if it isn't perfectly neat, since it softens into place later.
  3. Spread about a third of the pumpkin filling evenly over the graham crackers using an offset spatula. Take your time here so every bite gets the same amount of filling. Smooth it right to the edges of the dish for clean, even layers.
  4. Add another layer of graham crackers directly on top of the filling, followed by another third of the pudding mixture. Repeat once more so you end with crackers on top, ready for the frosting. This layering is what gives the dessert its classic eclair-cake structure.
  5. Spread the melted chocolate frosting evenly over the final graham cracker layer using a spatula. Work quickly since the frosting firms up as it cools. This glossy top layer is what makes it taste just like a real eclair.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least four hours, though overnight works best. This chilling time is what softens the graham crackers into cake-like layers. Don't rush this step, or the texture won't set properly.
  7. Once fully chilled, dust the top lightly with cinnamon before slicing into squares. Use a sharp knife and wipe it clean between cuts for neat pieces. Serve straight from the fridge for the best texture and flavor.

Notes

  • I always use full-fat milk since it makes the pudding filling noticeably creamier than low-fat versions.
  • I let mine chill overnight whenever I can, because the graham crackers turn out so much softer and more cake-like.
