Pumpkin Pasta Sauce Recipe

I still remember the first time I stirred pumpkin puree into a pan of butter and garlic and watched it turn into the silkiest sauce I'd ever made. I wasn't sure it would work, but one bite of pasta coated in that warm, nutty sauce and I was hooked for the whole season. Now I make this pumpkin pasta sauce almost every week once the weather turns cool

Ingredients
  

  • 2 tablespoons unsalted butter – forms the rich base of the sauce and helps the garlic bloom.
  • 1 tablespoon olive oil – keeps the butter from burning while you sauté.
  • 1 small shallot finely chopped – adds a mellow, slightly sweet onion flavor.
  • 3 cloves garlic minced – use fresh cloves, not the jarred kind, for the best aroma.
  • 1 cup pumpkin puree – go with plain canned pumpkin or fresh roasted pumpkin never pumpkin pie filling.
  • 1 tablespoon fresh sage chopped – this herb is what makes the sauce taste like fall.
  • ½ cup heavy cream – gives the sauce its velvety texture; half-and-half works in a pinch.
  • ½ cup reserved pasta water – helps thin the sauce and helps it cling to the noodles.
  • ½ cup parmesan cheese freshly grated – grate it yourself, pre-shredded cheese doesn't melt as smoothly.
  • ¼ teaspoon nutmeg – a small pinch rounds out the pumpkin's earthy flavor.
  • Salt and black pepper to taste – season gradually and taste as you go.
  • 12 ounces pasta fettuccine, penne, or gnocchi – pick a shape that holds onto a creamy sauce well.

Method
 

  1. Bring a large pot of salted water to a boil and cook your pasta until just al dente. Before draining, scoop out about a cup of the starchy pasta water and set it aside. This water is liquid gold for loosening the sauce later, so don't skip this step.
  2. While the pasta cooks, melt the butter with the olive oil in a skillet over medium heat. Add the chopped shallot and cook for about 3 minutes until soft. Stir in the garlic and sage, and cook for another minute until fragrant but not browned.
  3. Stir the pumpkin puree straight into the skillet with the aromatics. Let it cook for 2 to 3 minutes, stirring often, so the raw edge cooks off and the pumpkin flavor deepens slightly before you add any liquid.
  4. Pour in the heavy cream and about half of the reserved pasta water. Whisk everything together until smooth, then add the nutmeg, salt, and pepper. Let the sauce simmer gently for 5 minutes so the flavors come together.
  5. Turn the heat to low and stir in the grated parmesan a little at a time until it melts completely into the sauce. If the sauce looks too thick, add more of the reserved pasta water until it reaches a silky, pourable consistency.
  6. Add the drained pasta directly into the skillet and toss until every piece is coated in sauce. Let it sit for a minute off the heat so the pasta can soak up the flavor, then plate it up right away while it's warm.

Notes

  • I always toast the sage in the butter for a few extra seconds. It makes the whole kitchen smell incredible and deepens the flavor.
  • I never skip reserving the pasta water; it's the easiest way to fix a sauce that's gone too thick.
  • I like to add the cheese off direct heat so it melts smoothly instead of turning grainy.
  • I taste as I go and add salt in small pinches, since parmesan already brings a lot of saltiness.
  • I sometimes finish the dish with a drizzle of olive oil and cracked pepper for extra richness.
