Pumpkin Smoothie Bowl Recipe

I started making this pumpkin smoothie bowl the second the weather cooled down, and now I honestly can't stop. It tastes like pumpkin pie in a bowl, but I don't feel guilty eating it before 9 a.m.

Ingredients
  

  • 1 frozen banana sliced — the frozen texture is what makes this bowl thick enough to eat with a spoon
  • ½ cup canned pumpkin puree — grab plain pumpkin puree not pumpkin pie filling, or your bowl will turn out overly sweet
  • 1 tablespoon cashew butter — adds creaminess and healthy fat though almond or peanut butter work just as well
  • 1 teaspoon pumpkin pie spice — this is where all that cozy fall flavor comes from so don't skimp on it
  • 1 scoop vanilla protein powder — turns this into more of a pumpkin protein bowl instead of just a sweet snack
  • ¼ cup milk of choice — start with less since you can always add more if the blender needs help moving
  • Banana slices for topping — adds natural sweetness and a nice pop of color on top
  • 1 tablespoon pepitas for topping — gives a little crunch and a subtle nuttiness against the creamy base
  • 2 tablespoons granola for topping — brings texture so every bite isn't just soft and smooth

Method
 

  1. Place your frozen banana, pumpkin puree, cashew butter, pumpkin pie spice, and protein powder into a high-powered blender. Pour in a small splash of milk to help things move before you start blending.
  2. Blend everything on high until it looks completely smooth with no visible banana chunks left behind. The mixture should be noticeably thick, almost like soft-serve, not thin like a regular drinkable smoothie.
  3. If your blender is struggling or the mixture looks too stiff to move, add a small splash more milk or water. Go slowly here, since it's much easier to loosen a thick bowl than to fix one that's turned too watery.
  4. Once it's fully blended and thick, pour or spoon the mixture into your serving bowl. Use the back of a spoon to smooth the top so your toppings have a nice, even surface to sit on.
  5. Arrange banana slices, pepitas, and granola over the top in whatever pattern looks appealing to you. Serve immediately, since smoothie bowls soften quickly and taste best ice-cold.

Notes

  • I always freeze my banana the night before, since a fresh banana just doesn't get this bowl thick enough.
  • I use a tamper or stop and scrape the blender a few times, which keeps everything moving without adding extra liquid.
  • I taste the mixture before adding toppings, since pumpkin brands vary and sometimes I want an extra pinch of spice.
  • I keep my liquid additions small and gradual, because it's way too easy to turn a thick bowl into a thin smoothie by accident.
  • I always add my toppings right before eating, otherwise the granola gets soggy sitting on top.
