Roast Beef Smoked Gouda Grilled Cheese Recipe

I recently made this roast beef smoked gouda grilled cheese, and let me tell you—it was a game-changer. The combination of tender roast beef, smoky gouda, and caramelized onions on buttery, toasted sourdough bread? Absolutely delicious. Ingredients
  

  • 1 large red onion thinly sliced: Red onions add a sweet and slightly tangy flavor that balances well with the richness of the beef and cheese.
  • 2 tablespoons butter divided: Butter is essential for grilling the bread to a golden, crispy perfection.
  • 1 tablespoon fresh sage coarsely chopped: Sage infuses the onions with an earthy aroma, enhancing the overall flavor profile.
  • 2 slices of sourdough bread: Sourdough's tangy taste and sturdy texture make it ideal for holding up to the hearty fillings.
  • 1/4 pound sliced roast beef: Opt for thinly sliced roast beef for easy layering and a tender bite.
  • 3-4 ounces smoked gouda sliced: Smoked gouda melts beautifully and adds a rich, smoky flavor that complements the beef.

Method
 

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced red onion and chopped sage. Cook, stirring occasionally, until the onions are soft and golden brown, about 20 minutes.
  2. While the onions are caramelizing, butter one side of each slice of sourdough bread with the remaining tablespoon of butter.
  3. Place one slice of bread, buttered side down, on a clean surface. Layer with smoked gouda slices, followed by roast beef, and then the caramelized onions. Top with the second slice of bread, buttered side up.
  4. Heat a skillet over medium heat. Place the assembled sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, about 3 minutes per side.

  • Use Fresh Ingredients: Freshly grated smoked gouda melts better and has a more pronounced flavor.
