Roasted Brussels Sprouts Recipe

I still remember the first time I made these roasted brussel sprouts. I expected soft, bitter little cabbages, and I got golden, crunchy edges instead. The kitchen smelled nutty and sweet, and my plate was empty in minutes.
Prep Time 5 minutes
Cook Time 30 minutes

Ingredients

  • 1 pound Brussels sprouts trimmed: pick firm, bright green ones with tight leaves.
  • 2 tablespoons extra-virgin olive oil: it helps the edges brown and crisp.
  • ½ teaspoon sea salt: salt pulls out flavor and balances any bitterness.
  • ¼ teaspoon freshly ground black pepper: grind it fresh for a sharper bite.
  • 1 tablespoon fresh lemon juice optional: a splash of brightness after roasting.
  • 2 teaspoons lemon zest optional: the zest adds fragrance without extra tang.
  • 1 tablespoon grated Parmesan optional: grate it fresh, because pre-shredded melts poorly.
  • 1 tablespoon fresh thyme leaves optional: add it at the end so it doesn't scorch.
  • Fresh parsley leaves for garnish (optional): they add a fresh, green finish.
  • Pinch of red pepper flakes optional: a tiny kick that wakes up the whole pan.

Method

  1. Set your oven to 425°F and let it get fully hot. A properly heated oven gives you browning instead of steaming. Line your baking sheet with parchment paper while you wait.
  2. Rinse the sprouts and pat them very dry. Slice off any dry or woody stem ends and pull away loose or yellow outer leaves. Wet sprouts steam in the oven, so dry them well.
  3. Slice each sprout in half from top to bottom. Leave very small ones whole so they cook at the same pace as the rest. Even sizes mean even roasting.
  4. Add the sprouts to a large bowl with the olive oil, salt, and pepper. Toss until every piece looks lightly glossy. Don't drown them, because too much oil makes them greasy.
  5. Spread the sprouts on the lined baking sheet with the cut sides facing down. That flat side is what gets deeply golden. Leave a little space between each one.
  6. Slide the pan into the oven and roast for 20 to 30 minutes. Start checking around 20 minutes, since sprout size and oven heat vary. They are ready when tender inside and browned around the edges.
  7. While the sprouts are still warm, toss them with the lemon juice, zest, Parmesan, and thyme. Finish with parsley and a pinch of red pepper flakes. The residual heat softens the cheese and brings out the aroma.
  8. Move the sprouts to a warm bowl or platter and taste for salt. Serve them hot for the best crunch. They lose crispness as they sit, so don't wait too long.

Notes

  • I always preheat my baking sheet for five minutes, so the sprouts sizzle the moment they land.
  • I keep the pan to a single layer. When I crowded it once, the sprouts turned soft and pale.
  • I save the loose leaves and roast them separately for the last 15 minutes, because they crisp up like chips.
  • I add herbs, garlic, and lemon after roasting, since they can burn at this high heat.
  • I check my oven with a thermometer. Mine runs hot, and my first batch darkened too fast.
  • I skipped the air fryer for this recipe. My sprouts came out too dry there.
