Roasted Green Beans with Caramelized Onions Recipe

I have to admit, I wasn’t always a green bean fan, but roasting them with caramelized onions completely changed my mind. The crispy edges and sweet, soft onions make this dish irresistible. It’s simple, healthy, and something I love bringing to family dinners. Every bite is packed with flavor, yet it only takes a handful of ingredients

Ingredients
  

  • 1 pound fresh green beans – trim the ends for even cooking; fresh beans give the best crunch.
  • 1 large Vidalia or sweet onion – thinly sliced for maximum caramelization; sweetness balances the beans.
  • 2 tablespoons olive oil – coats the beans and onions helping them roast beautifully.
  • Salt – enhances natural flavors; I prefer kosher salt.
  • Freshly ground black pepper – adds a slight kick and depth to the flavor.

Method
 

  1. Start by trimming the green beans and slicing your onions thinly. I like to keep the onions uniform so they cook evenly and caramelize nicely.
  2. Heat olive oil in a skillet, add onions, and cook on medium-high until soft. Reduce to medium-low and stir occasionally for about 30 minutes until golden brown.
  3. Toss green beans with olive oil, salt, and pepper, then spread them on a baking sheet. Roast at 400°F for 20-25 minutes, shaking the pan halfway for even browning.
  4. Once the beans are roasted, fold in the caramelized onions gently. I always taste and adjust the seasoning with a bit more salt and pepper before serving.

Notes

  • I always dry beans thoroughly after washing to ensure they roast instead of steam.
  • Stir onions gently; I’ve found that breaking them up too early reduces flavor.
  • Roast beans on a single layer for maximum caramelization.
  • Don’t rush the onion caramelization; the slow process creates unmatched sweetness.
  • For extra flavor, I sometimes add a teaspoon of garlic powder or fresh minced garlic at the end.
