Roasted Potatoes In A Melted Goat Cheese Dressing Recipe

I made these Roasted Potatoes in a Melted Goat Cheese Dressing recently, and they turned out absolutely delicious. I loved how the warm potatoes softened the creamy goat cheese instantly. Ingredients
  

  • 2 pounds potatoes cleaned and cut into wedges (Yukon gold or similar waxy potatoes work best for crispy edges and soft centers)
  • 1 tablespoon oil helps the potatoes roast evenly and turn golden
  • Salt and pepper to taste season well for maximum flavor
  • 4 tablespoons goat cheese chevre, crumbled and at room temperature (melts smoothly into a creamy dressing)
  • 2 tablespoons olive oil adds richness to the dressing
  • 2 tablespoons lemon juice or apple cider vinegar provides bright acidity
  • 1 clove garlic minced or grated (fresh garlic gives stronger flavor)
  • 1 teaspoon Dijon mustard adds sharpness and depth
  • 1 teaspoon grainy mustard adds texture and extra flavor
  • Salt and pepper to taste adjust according to preference

Method
 

  1. Start by washing and cutting the potatoes into evenly sized wedges. This ensures they cook at the same rate. Toss them with oil, salt, and pepper for even coating.
  2. Preheat the oven to 400°F (200°C). Spread the potatoes in a single layer on a baking sheet and roast for about 35 minutes, flipping halfway through, until crisp and golden.
  3. While the potatoes roast, whisk together goat cheese, olive oil, lemon juice or vinegar, garlic, Dijon mustard, grainy mustard, salt, and pepper. Mix until smooth and creamy.
  4. Once the potatoes are hot from the oven, immediately toss them with the goat cheese dressing. The heat will melt the cheese slightly, creating a rich coating. Serve warm for the best taste
