Salmon Scrambled Eggs With Cream Recipe

I stumbled onto this recipe almost by accident, and now I make it whenever I want breakfast to feel like a treat instead of a chore. I had some smoked salmon sitting in my fridge that needed using, and instead of doing the usual bagel-and-lox thing, I decided to fold it into a bowl of soft, buttery scrambled eggs
Total Time 20 minutes
Servings: 4

Ingredients

  • 6 large eggs – the base of the dish; fresh eggs give the fluffiest texture
  • 2 oz cream cheese room temperature, cut into small pieces – this is what makes the eggs extra creamy, so don't skip it
  • 2 tbsp heavy cream – adds richness and helps keep the eggs soft instead of rubbery
  • Pinch of salt – balances the richness of the cream and salmon
  • 1/4 tsp ground black pepper – a little warmth that plays well with the smoky salmon
  • 2 tbsp butter – use real butter not margarine, for the best flavor and a smooth cook
  • 6 oz cold smoked salmon chopped – the star ingredient; go for good-quality smoked salmon, not canned
  • 2 tbsp chopped chives or scallions – a fresh oniony garnish that cuts through the richness

Method

  1. Crack all six eggs into a medium bowl and pour in the heavy cream. Drop in the small pieces of cream cheese along with a pinch of salt and the black pepper. Whisk everything together until it's mostly smooth; a few small lumps of cream cheese are totally fine and will melt in the pan.
  2. Set a nonstick pan over medium-low heat and add the butter. Let it melt slowly rather than cranking the heat, since low and slow is the secret to eggs that stay soft instead of turning tough or dry. Once the butter is fully melted and just starting to foam, you're ready for the eggs.
  3. Pour the whisked egg mixture into the warm pan. Use a spatula to stir slowly and continuously, pushing the eggs from the edges toward the center. This gentle, constant motion is what creates those soft, creamy curds instead of dry, overcooked chunks.
  4. Once the eggs are nearly set but still slightly glossy, usually around 2 to 3 minutes, add the chopped smoked salmon. Gently fold it through the eggs so it warms through without breaking apart too much. This should only take another 30 to 40 seconds.
  5. Transfer the eggs to a serving dish right away, since they'll keep cooking a bit from residual heat if left in the pan. Scatter the chopped chives or scallions on top for a pop of color and a fresh, mild bite. Serve immediately while everything is still warm and creamy.

Notes

  • I always pull the eggs off the heat a touch early, since they keep cooking in the residual warmth of the pan and dish.
  • I let my cream cheese sit out for about 20 minutes before starting, because cold cream cheese doesn't blend in smoothly.
  • I add the salmon at the very end so it stays tender instead of turning rubbery from too much heat.
  • I keep my heat on medium-low the whole time, since rushing on high heat is the fastest way to ruin creamy eggs.
  • I sometimes stir in a tiny squeeze of lemon juice at the end, which brightens up the richness beautifully.
