Savory Cauliflower Steaks with Cheese Recipe

I still remember the first time I sliced a whole cauliflower into thick "steaks" instead of tossing it into florets like usual. I wasn't expecting much, but the moment they came out of the oven golden, cheesy, and slightly crisp on the edges, I knew this was going into my regular rotation

Ingredients
  

  • 1 whole head of cauliflower – choose one that feels heavy and firm with tightly packed florets and no brown spots, since a fresher head slices into cleaner "steaks."
  • 1/4 cup olive oil – this is what carries the seasoning into every bite so use a good quality extra virgin oil for the best flavor.
  • 2 tablespoons parmesan cheese grated – freshly grated melts and clings to the cauliflower far better than the pre-shredded kind, which is often coated in anti-caking powder.
  • 1/2 teaspoon onion powder – adds a savory background note without the texture of fresh onion.
  • 1/2 teaspoon garlic powder – blends smoothly into the oil mixture and coats the cauliflower evenly unlike minced garlic which can burn.
  • 1/2 teaspoon paprika – brings warmth and a subtle smoky color to the finished dish.
  • Salt and pepper to taste – season generously, since cauliflower is naturally mild and needs a confident hand here.
  • 1/2 cup shredded mozzarella cheese – grate this fresh off the block if you can since block cheese melts smoother and avoids the waxy texture of bagged shredded cheese.
  • Fresh parsley optional – for a bright, fresh garnish right before serving.

Method
 

  1. Start by preheating your oven to 400°F, or set your air fryer to the same temperature if you're using one instead. While it heats up, line a large rimmed baking sheet with parchment paper. This keeps the cheese from sticking once it melts and makes cleanup effortless once you're done cooking.
  2. In a small bowl, whisk together the olive oil, grated parmesan, onion powder, garlic powder, paprika, salt, and pepper. This blend is what gives the cauliflower its deep, savory flavor once roasted. Stir it well so the spices don't clump together in one spot.
  3. Remove the outer leaves from the base of the cauliflower, but leave the core intact since it holds the steaks together. Slice the head in half through the stem, then slice each half in half again to create four thick steaks. Keeping the core attached is the key step that stops them from falling apart on the pan.
  4. Transfer the cauliflower steaks onto your prepared baking sheet. Using a pastry brush, coat every side of each steak generously with the seasoned oil mixture, making sure to get the tops, bottoms, and edges. Don't rush this part, since the oil is what carries most of the flavor into the vegetable.
  5. Place the pan in the oven and roast for about 20 minutes, or air fry for about 15 minutes, flipping halfway through if using the air fryer. You're looking for the stalk to become fork-tender and the edges to turn a deep golden brown. This is what gives the steaks their satisfying texture.
  6. Once the cauliflower is tender, pull the pan out and sprinkle the shredded mozzarella evenly over each steak. Slide it back into the oven for just a few more minutes, until the cheese is fully melted and slightly bubbly. Garnish with fresh parsley right before serving for a pop of color.

Notes

  • I always make sure my cauliflower head is on the larger side, since smaller heads tend to fall apart when sliced into steaks.
  • I like to save the loose florets that break off during slicing and roast them alongside the steaks so nothing goes to waste.
  • I've found that patting the cauliflower dry with a paper towel before brushing on the oil helps the seasoning stick better.
  • I sometimes double the cheese on top because, honestly, the melted cheesy crust is my favorite part.
  • I let the steaks rest for a couple of minutes after they come out of the oven, which helps the cheese set slightly instead of sliding right off.
