Slow Cooker Broccoli Cheddar Soup Recipe

I still remember the first time I made this in my crockpot on a lazy Sunday, mostly because I didn't want to babysit a pot on the stove. I tossed everything in, walked away, and came back four hours later to the smell of melted cheese and broccoli filling my whole kitchen

Ingredients
  

  • 16 ounces frozen broccoli florets – frozen works better here than fresh because it holds up to the long cook time without turning mushy
  • 2 stalks celery finely diced – adds a subtle savory crunch that balances the creaminess
  • 1 small onion finely diced – builds the flavor base for the whole soup
  • 1 teaspoon garlic powder – fresh minced garlic works too if you prefer a bolder bite
  • ¼ teaspoon nutmeg – sounds odd but it deepens the flavor in a way you can't quite place
  • ½ teaspoon black pepper – adjust to taste
  • 3 ounces cream cheese softened – this is the secret to that ultra-creamy texture
  • 2 cups chicken broth – go low-sodium if you're watching salt since the cheese adds plenty
  • 2 teaspoons chicken base like Better Than Bouillon – gives the broth a richer, more savory backbone than broth alone
  • 12 ounces evaporated milk – holds up to heat better than regular milk and won't curdle as easily
  • 2 tablespoons all-purpose flour – helps thicken the soup just enough
  • cup grated Parmesan cheese – adds a nutty depth you won't get from cheddar alone
  • 2 cups shredded cheddar cheese plus more for topping – grate it fresh off the block if you can, it melts smoother than the bagged kind

Method
 

  1. Add the frozen broccoli, celery, onion, garlic powder, nutmeg, pepper, cream cheese, chicken broth, chicken base, evaporated milk, and flour straight into your slow cooker. Give everything a good stir so the cream cheese starts to break up a bit and the flour doesn't clump. You don't need to pre-cook anything at this stage.
  2. Pop the lid on and set your slow cooker to low for 3 to 4 hours. You'll know it's ready when the broccoli is fork-tender and the whole kitchen smells amazing. I usually check around the 3-hour mark since slow cookers can run a little differently from one another.
  3. Once the broccoli is tender, add the Parmesan and shredded cheddar cheese. Stir until everything is fully melted and smooth. This is the step that turns your broth into that classic thick, cheesy soup texture everyone loves.
  4. Turn off the slow cooker and let the soup sit, covered, for about 8 to 10 minutes. This resting time lets it thicken up a bit more and lets the cheese finish melting evenly. Taste and adjust the salt and pepper before ladling it into bowls.

Notes

  • I always grate my own cheddar instead of using the bagged kind because it melts so much smoother and doesn't leave that grainy texture.
  • I like to sauté my onion and celery in a little butter for a few minutes before adding them if I have extra time, since it softens them up more than the slow cooker alone does.
  • I never skip the nutmeg, even though it feels strange to add it. It really does round out the flavor in a way you can't replace.
  • I keep a batch of cornstarch slurry on standby in case I want the soup a little thicker toward the end.
  • I always taste before adding extra salt since the cheese and chicken base already bring plenty of sodium to the party.
