  • 1 ½ pounds boneless skinless chicken thighs – thighs stay juicy and shred beautifully after hours of slow cooking, so avoid swapping in dry chicken breast if you can help it
  • 1 ½ cups jarred salsa verde – pick a good-quality brand you'd happily eat on its own since it's really the backbone of this dish's flavor
  • 1 4-ounce can chopped mild green chiles – adds a gentle layer of heat and smokiness without overpowering the salsa
  • 8 garlic cloves finely chopped – fresh garlic makes a noticeable difference here, so skip the jarred minced kind if you can
  • 1 jalapeño stemmed, seeded and diced – leave a few seeds in if you like extra kick, or omit entirely for a milder dish
  • 1 teaspoon garlic powder – layers in a deeper rounder garlic flavor alongside the fresh cloves
  • 1 teaspoon onion powder – builds savory depth without adding extra texture or moisture
  • 1 teaspoon ground cumin – this earthy warm spice is what gives the dish its signature Mexican-inspired flavor
  • 3 scallions thinly sliced (green and white parts) – stir in at the end for a fresh, mild oniony crunch
  • 1 small bunch cilantro leaves and tender stems finely chopped (about 1 heaping cup) – fresh cilantro brightens everything up right before serving
  • Kosher salt to taste – season gradually since jarred salsa already carries some salt
  • Fresh lime juice to taste – a final squeeze wakes up all the flavors right before you serve

Method
 

  1. Place the chicken thighs into your slow cooker along with the salsa verde, chopped green chiles, garlic, jalapeño, garlic powder, onion powder, and cumin. Stir everything together gently so the chicken gets fully coated in the seasoned sauce. This step sets the flavor foundation for the entire dish.
  2. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours if you're short on time. The chicken is done when it's tender enough to pull apart easily with a fork. Resist the urge to lift the lid too often, since it lets heat escape and slows down cooking.
  3. Once the chicken is fully cooked, remove it from the slow cooker and place it on a cutting board. Use two forks to shred it into bite-sized pieces, or save time by using a hand mixer on low speed. Either method works well and takes just a minute or two.
  4. Add the shredded chicken back into the slow cooker with the sauce and stir well so every piece soaks up that tangy, savory flavor. This is where the dish really comes together, turning simple shredded chicken into something deeply flavorful. Let it sit for a few minutes so the flavors meld.
