Slow Cooker Steak Bites Recipe

  • 2 tablespoons olive oil – helps sear the meat and lock in juices
  • 1 small sweet onion thinly sliced – adds sweetness and builds a rich base flavor
  • 3 cloves garlic sliced – brings bold aroma and savory depth
  • 1 cup unsalted beef stock – keeps the dish from getting too salty while adding richness
  • 1 packet au jus gravy mix – boosts flavor and creates a delicious gravy
  • 4 tablespoons unsalted butter sliced – melts into the beef for extra richness and tenderness
  • Fresh parsley optional – adds color and freshness when serving

Method
 

  1. Start by placing the steak pieces in a large bowl and seasoning them with salt and pepper. Toss everything well so each piece is evenly coated. This simple step builds the base flavor for the dish.
  2. Heat olive oil in a skillet over medium-high heat and sear the steak in batches. Make sure not to overcrowd the pan, as this helps create a nice brown crust. Searing locks in juices and adds a deep, rich flavor.
  3. Once the steak is seared, transfer it into your slow cooker. Add sliced onions and garlic, spreading them evenly over the meat. These aromatics will infuse the dish with incredible flavor as it cooks.
  4. Pour the beef stock over the steak, then sprinkle the au jus gravy mix on top. Place slices of butter over everything so it melts slowly into the mixture. This creates a rich, savory gravy.
  5. Cover the slow cooker and cook on HIGH for 3–4 hours or LOW for 6–8 hours. Stir occasionally if possible, but even without stirring, the steak will turn out tender and flavorful.

Notes

  • I always sear the meat in batches because overcrowding prevents proper browning
  • I like adding mushrooms at the end for extra texture and flavor
  • Sometimes I toss in fresh herbs like rosemary for a more aromatic dish
