Spice-Crusted Steak & Feta Salad Recipe

I still remember the first time I made this salad on a weeknight when I had zero energy to cook but still wanted something that felt like a treat. I rubbed a steak with a smoky spice blend, seared it fast and hot, and piled the slices over crisp lettuce with feta, cucumber, and tomatoes

Ingredients
  

  • 1 lb 450g ranch steak or sirloin steak – a lean, flavorful cut that sears beautifully and slices well
  • 1 tablespoon steak spice blend paprika, cumin, garlic powder, chili powder, salt, pepper – this is what gives the "crust" its punch, so don't skimp on it
  • 1 teaspoon oil – use a high smoke-point oil like avocado or vegetable oil for a proper sear
  • 4 cups baby lettuce or mixed greens – go for freshly washed crisp leaves, not wilted bagged greens
  • ½ cup feta cheese crumbled – block feta crumbled fresh tastes far creamier than pre-crumbled bags
  • 1 mini cucumber sliced – adds crunch and a cool contrast to the warm, spiced steak
  • 4-6 grape tomatoes halved – pick ones that feel firm for the best sweetness
  • 2 tablespoons mayonnaise – forms the creamy base of the dressing
  • 3 tablespoons Greek yogurt or Greek vinaigrette – adds tang and keeps the dressing light not heavy
  • 1 small garlic clove minced – fresh garlic beats the jarred stuff every time here
  • 1 teaspoon lemon juice – brightens the whole dressing and cuts through the richness
  • Salt and pepper to taste – always taste and adjust right before serving

Method
 

  1. at the steak completely dry with paper towels, since a wet surface won't crust properly in the pan. Rub the spice blend generously over both sides, pressing it in with your fingers so it really sticks. Let it sit at room temperature for about 5 minutes so the spices bloom slightly.
  2. Heat the oil in your skillet over high heat until it's shimmering and almost smoking. Lay the steak in carefully and don't touch it for 3-4 minutes per side, depending on thickness. You're looking for a deep brown crust and an internal temperature of about 130-135°F for medium-rare.
  3. Move the steak to a cutting board and let it rest for 5 minutes before slicing, which keeps all those juices inside instead of on your board. Slice it thinly against the grain for the most tender bite. Skipping this rest is the easiest way to end up with a dry, tough salad topper.
  4. While the steak rests, whisk together the mayonnaise, Greek yogurt, minced garlic, and lemon juice in a small bowl. Season with a pinch of salt and pepper, then taste and adjust the tang or creaminess as you like. This dressing should be thick enough to coat a spoon but still pourable.
  5. Spread the lettuce out on a large plate or in a wide bowl as your base layer. Scatter the cucumber and tomato halves over the greens, then fan the sliced steak across the top. Finish with crumbled feta and a generous drizzle of the dressing, then serve right away while the steak is still warm.

Notes

  • I always let my steak come closer to room temperature before searing, since a fridge-cold steak cooks unevenly.
  • I press the spice rub in firmly with my hands instead of just sprinkling it on, so it actually forms a crust instead of falling off in the pan.
  • I never skip resting the steak, even when I'm starving, because slicing too early drains out all the juices.
  • I like to toast my spice blend for 30 seconds in the dry skillet before mixing it with oil, which makes the flavor noticeably deeper.
  • I keep my greens in the fridge until the very last second before plating, so they stay crisp instead of wilting under the warm steak.
