Spicy Shrimp Quinoa Bowl Recipe

I still remember the first time I made this spicy shrimp quinoa bowl on a random Tuesday when I had nothing planned for dinner. I tossed together what I had in the fridge, and it turned into one of my favorite weeknight meals ever since. The shrimp gets this gorgeous smoky-spicy crust while the quinoa stays light and fluffy underneath.

Ingredients
  

  • Quinoa – 1 cup rinsed well; this removes the natural coating that can taste bitter
  • Water or low-sodium broth – 2 cups broth adds more depth than plain water
  • Large shrimp peeled and deveined – 1 pound, fresh or thawed shrimp cook more evenly than frozen ones tossed in straight from the freezer
  • Olive oil – 2 tablespoons divided, for searing the shrimp and finishing the bowl
  • Smoked paprika – 1 teaspoon gives that signature smoky color and flavor
  • Ground cumin – ½ teaspoon adds an earthy warmth that balances the heat
  • Chili powder – ½ teaspoon for a steady, gentle spice
  • Cayenne pepper – ¼ teaspoon this is where the real heat comes from, so adjust to taste
  • Garlic minced – 2 cloves, fresh garlic beats the jarred stuff every time
  • Lime juice – 2 tablespoons brightens the whole bowl right before serving
  • Cherry tomatoes halved – 1 cup, adds juicy freshness and color
  • Corn kernels – 1 cup fresh or grilled corn gives a nice pop of sweetness
  • Avocado diced – 1 medium, adds creaminess that balances the spice
  • English cucumber diced – 1, for crunch without overpowering the other flavors
  • Salad greens – 2 cups use whatever you have on hand, I like a soft butter lettuce
  • Pumpkin seeds – 3 tablespoons toasted for extra crunch and texture
  • Salt and black pepper – to taste season in layers rather than all at once

Method
 

  1. Rinse your quinoa thoroughly under cold water to get rid of any bitterness. Add it to a saucepan with water or broth, bring it to a boil, then reduce the heat and cover. Let it simmer for about 15 minutes until the liquid is fully absorbed and the quinoa looks fluffy.
  2. While the quinoa cooks, toss the shrimp in a bowl with smoked paprika, cumin, chili powder, cayenne, minced garlic, salt, and pepper. Make sure every piece gets an even coating so the flavor doesn't end up patchy. Let it sit for a few minutes while you prep your toppings.
  3. Heat olive oil in a large skillet over medium-high heat until it shimmers. Add the shrimp in a single layer and cook for about 2 minutes per side, just until they turn pink and slightly charred. Avoid overcrowding the pan, or the shrimp will steam instead of sear.
  4. While the shrimp cooks, dice your cucumber, avocado, and halve the cherry tomatoes. If you're using fresh corn, you can quickly char it in the same skillet for extra flavor. Keep everything in separate small bowls so assembly is quick and easy.
  5. Start with a base of fluffy quinoa in each bowl, then layer on the salad greens. Arrange the shrimp, tomatoes, corn, cucumber, and avocado around the bowl so every bite gets a bit of everything. A little visual variety goes a long way here.
  6. Drizzle fresh lime juice over the top and sprinkle with toasted pumpkin seeds for crunch. Taste and add a pinch more salt or cayenne if you want extra heat. Serve immediately while the shrimp is still warm.

Notes

  • I always toast my pumpkin seeds in a dry pan for a minute or two before adding them, it makes the crunch so much better.
