Spider Web Cream Cheese Dip Recipe

I still remember the first time I made this Spider Web Cream Cheese Dip for a Halloween get-together, and it was gone before I even got to try a chip myself! Between the creamy layers and that eerie sour cream web on top, it looked way more impressive than the effort it actually took me.

Ingredients
  

  • 16 oz can refried beans – forms the hearty base layer and holds everything together
  • 8 oz cream cheese softened – gives the dip its rich, creamy texture, so let it sit out first
  • 1 packet taco seasoning – adds bold Tex-Mex flavor without extra chopping or mixing
  • 1 ½ cups sour cream divided – half goes into the base, half becomes your spider web
  • 1 cup guacamole store-bought or homemade – smooth guacamole pipes much better than chunky
  • 1 cup shredded cheddar cheese – freshly grated cheese melts and clings better than the bagged kind
  • ½ cup chunky salsa drained – drain it well or your layers turn watery fast
  • 1 small can black olives sliced – perfect for crafting little spider legs and bodies
  • 2 tablespoons diced tomato – adds a fresh pop of color around the edges
  • 1 green onion thinly sliced – a light, sharp bite that balances the creamy layers
  • Tortilla chips for serving – the perfect crunchy scoop for every layer

Method
 

  1. Spread the refried beans evenly across the bottom of your pie dish or casserole dish. I like using the back of a spoon to smooth it out so the next layer sits flat. This becomes the sturdy foundation for every layer that follows.
  2. In a bowl, beat the softened cream cheese with taco seasoning and a cup of sour cream until smooth. I always make sure there are no lumps left, since a smooth mixture spreads so much easier over the beans without tearing them up.
  3. Spread the guacamole evenly over the cream cheese layer using a spatula. I try to keep the surface as flat as possible here, because this layer is where your spider web design is going to live.
  4. Spoon the remaining sour cream into a small ziplock bag and snip off a tiny corner. Pipe concentric circles starting from the center outward, then drag a toothpick from the middle to the edges in straight lines to form the web pattern.
  5. Sprinkle shredded cheddar cheese, diced tomato, and green onion around the edges of the dip. I usually leave the center web clean so the spooky design stays the star of the show.
  6. Slice a few olives in half for spider bodies, then cut extra olives into thin strips for legs. Arrange them on the web so it looks like little spiders are crawling across your dip.
  7. Pop the dip in the fridge for about 10 minutes before serving so the layers firm up slightly. Serve it cold with a big bowl of tortilla chips on the side for dipping

Notes

  • I always drain my salsa really well, because extra liquid makes the layers slide around instead of staying neat.
  • I let my cream cheese soften on the counter for at least 30 minutes so it blends without any stubborn lumps.
  • I thin my sour cream with a splash of milk before piping, since it flows through the bag so much smoother.
  • I trace my web design lightly with a toothpick first, then go back over it with the piped sour cream for cleaner lines.
  • I keep my olive spiders in the fridge until right before serving so they don't slide off the web.
