Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with non-stick spray or a thin layer of olive oil.
Place the chicken breasts on a cutting board and pound them to an even thickness using a meat mallet or rolling pin. This ensures even cooking. If the chicken breasts are too thick, you can slice them in half lengthwise.
In a large mixing bowl, combine: Cream cheese, Sour cream, Mayonnaise, Chopped spinach, Chopped artichokes, Garlic powder, Onion powder, Salt and pepper, && Half of the mozzarella cheese.
Mix well until you have a smooth, creamy mixture.
Place the chicken breasts in the prepared baking dish. Spread the spinach artichoke mixture evenly over the top of each piece of chicken.
Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly over the top. If you like a little spice, sprinkle some red pepper flakes as well.
Bake in the preheated oven for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Once done, remove the baking dish from the oven and let it rest for 5 minutes before serving. This helps the flavors settle. Serve warm and enjoy!
