Spinach Artichoke Chicken Bake Recipe

Spinach Artichoke Chicken Bake is a rich and creamy dish that combines the flavors of tender chicken, spinach, artichokes, and a blend of cheeses. This dish is perfect for a family dinner, meal prep, or even a potluck gathering.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1 cup canned or jarred artichoke hearts drained and chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes optional for a little heat

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with non-stick spray or a thin layer of olive oil.
  2. Place the chicken breasts on a cutting board and pound them to an even thickness using a meat mallet or rolling pin. This ensures even cooking. If the chicken breasts are too thick, you can slice them in half lengthwise.
  3. In a large mixing bowl, combine: Cream cheese, Sour cream, Mayonnaise, Chopped spinach, Chopped artichokes, Garlic powder, Onion powder, Salt and pepper, && Half of the mozzarella cheese.
  4. Mix well until you have a smooth, creamy mixture.
  5. Place the chicken breasts in the prepared baking dish. Spread the spinach artichoke mixture evenly over the top of each piece of chicken.
  6. Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly over the top. If you like a little spice, sprinkle some red pepper flakes as well.
  7. Bake in the preheated oven for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Once done, remove the baking dish from the oven and let it rest for 5 minutes before serving. This helps the flavors settle. Serve warm and enjoy!

Notes

  • Use fresh spinach for the best texture, but frozen spinach works too. Just be sure to thaw and squeeze out excess water.
  • Don’t over bake the chicken—use a meat thermometer to check for doneness.
  • For extra crunch, add some breadcrumbs or crushed crackers on top before baking.
  • Pair with sides like garlic bread, roasted veggies, or a simple salad for a complete meal.
