Sticky BBQ Beef Bites with Crispy Fries & Coleslaw Recipe

I made this sticky BBQ beef bites plate on a night when I wanted something hearty but didn't want to spend hours in the kitchen. The beef turns glossy and tender in a sweet-savory glaze, while the fries stay crunchy on the outside and soft in the middle. I paired it all with a cool, tangy coleslaw to balance the richness

Ingredients
  

  • 1 lb beef chuck or stew beef cubed – chuck has enough marbling to stay juicy while it simmers in the sauce, so avoid leaner cuts here
  • 2 tbsp olive oil – helps the beef sear properly instead of steaming in the pan
  • 3 garlic cloves minced – fresh garlic gives a much sharper flavor than the jarred version
  • 1 small onion sliced – adds natural sweetness once it softens with the beef
  • ½ cup BBQ sauce – pick a thicker sauce so it clings to the beef instead of running off
  • 2 tbsp soy sauce – brings a salty depth that balances the sweetness of the BBQ sauce
  • 1 tbsp honey – helps the sauce caramelize into that sticky finish
  • 1 tsp paprika – adds color and a light smoky note to the beef
  • 1 tsp salt – season the meat early so the flavor sinks in while it cooks
  • ½ tsp black pepper – freshly cracked pepper gives a sharper bite than pre-ground
  • 3 large potatoes cut into fries – russet potatoes work best since they crisp up nicely and stay fluffy inside
  • Oil for frying – use a neutral oil with a high smoke point like vegetable or canola
  • 2 cups shredded cabbage – slice it thin so it stays crunchy and absorbs the dressing evenly
  • 1 carrot shredded – adds color and a hint of natural sweetness to the slaw
  • 2 tbsp mayonnaise – gives the coleslaw its creamy texture without overpowering the cabbage
  • 1 tbsp vinegar – balances the mayo with a tangy kick
  • 1 lime halved – a fresh squeeze over the plate brightens the whole dish
  • 1 tbsp parsley chopped – use fresh parsley for a clean, herby finish rather than dried

Method
 

  1. Toss the beef cubes with paprika, salt, and black pepper until evenly coated. This step builds the base flavor before the beef even touches the pan. Letting it sit for a few minutes while you prep other ingredients helps the seasoning soak in.
  2. Heat the olive oil in a skillet over medium-high heat, then add the beef and onion slices, cooking until browned on all sides. Stir in the garlic, BBQ sauce, soy sauce, and honey, then reduce the heat and let everything simmer. Keep stirring occasionally until the sauce thickens and clings to the beef in a sticky glaze.
  3. While the beef simmers, heat your oil and fry the potato strips in batches until they turn golden and crisp. Avoid overcrowding the pot, since that drops the oil temperature and leaves the fries soggy. Season them with a light sprinkle of salt right after they come out of the oil.
  4. In a mixing bowl, combine the shredded cabbage and carrot with the mayonnaise and vinegar, tossing until everything is evenly coated. This slaw should taste fresh and slightly tangy, not heavy or overly creamy. Chill it briefly if you have time, since cold slaw pairs better with the warm beef.
  5. Arrange the sticky beef bites, crispy fries, and fresh coleslaw together on a plate, then add a lime wedge on the side. Sprinkle chopped parsley over the beef for a pop of color and freshness. Serve immediately while the fries are still hot and crunchy.

Notes

  • I always pat the beef dry before seasoning it, since excess moisture stops it from browning properly
  • I fry my potatoes twice, once at a lower temperature to cook them through and again at a higher heat for extra crunch
  • I let the BBQ sauce mixture simmer a little longer than I think I need to, since that's what gives the beef its sticky texture
  • I shred my cabbage by hand instead of using a food processor, since it keeps a better crunch
