Sticky Tofu Rice Bowl Recipe

I still remember the first time I put tofu in front of my family. My kids looked at it like I'd served them a science experiment. So I went back to the kitchen and came up with this sticky tofu rice bowl, and now it's one of the few dinners nobody argues about.

Ingredients
  

  • 2 cucumbers roughly chopped – adds crunch and freshness that balances the rich sauce
  • 1 tsp freshly minced ginger – gives the salad a warm zingy kick
  • 2 tbsp rice vinegar – brightens everything with a light tang
  • 1 tbsp soy sauce – rounds out the salad with savory depth
  • 1 tbsp sesame oil – adds nutty aroma don't skip this one
  • 500 g 1 lb firm tofu, drained – firm tofu holds its shape best when fried
  • 30 g ¼ cup cornflour (cornstarch) – dust it on for that signature crispy crust
  • 4 tbsp olive oil – enough oil to fry the tofu golden on all sides
  • 1 tsp freshly minced garlic – fresh garlic makes a real difference in flavor
  • 60 ml ¼ cup tamari or soy sauce – the savory backbone of the sauce
  • 2 tbsp brown sugar – balances the salty notes with gentle sweetness
  • 1 tbsp sesame oil – deepens the flavor with a toasty finish
  • 1 tbsp cornflour cornstarch – helps thicken the sauce to that sticky consistency
  • 60 ml ¼ cup water – mixed with cornflour to control the sauce's thickness
  • Steamed jasmine rice – the fluffy base that soaks up the sauce beautifully
  • 1 tsp sesame seeds – a simple garnish that adds texture and nutty flavor
  • 1 spring onion finely sliced – fresh, sharp finish on top of the bowl

Method
 

  1. I start by tossing the chopped cucumber with ginger, rice vinegar, soy sauce, and sesame oil in a bowl. I give it a good stir so every piece gets coated. Then I just set it aside it only gets better as it sits and marinates.
  2. Next, I cut the drained tofu into small cubes, roughly ¾ inch each. I pat them dry with paper towels first, since removing extra moisture helps the coating stick better. Then I dust each cube lightly and evenly in cornflour.
  3. I heat olive oil in a large frying pan over medium-high heat until it shimmers. I add the tofu in a single layer and cook for about 6 to 8 minutes, turning occasionally, until every side turns golden and crisp. Once done, I move it to a plate.
  4. With the same pan still warm, I lower the heat and add garlic, tamari, brown sugar, and sesame oil. I stir this for about a minute until it starts to thicken slightly. In a small bowl, I mix cornflour with water, then add it gradually to the pan until the sauce reaches that glossy, sticky texture I'm after.
  5. I return the crispy tofu to the pan and toss gently so every cube gets coated in that sticky sauce. If it feels too thick, I loosen it with a splash of water. Then I divide rice and cucumber salad into bowls, top with tofu, and finish with sesame seeds and spring onion.

Notes

  • I always press my tofu with paper towels before coating it this step alone makes the biggest difference in crispiness.
  • I never overcrowd the pan when frying, since the tofu steams instead of crisping if the pieces are too close together.
  • I add the cornflour slurry slowly, one spoon at a time, so I don't end up with a sauce that's too thick or gluey.
  • I like tossing the tofu in the sauce right before serving so it stays crunchy on the outside instead of going soft.
  • I sometimes air-fry the tofu instead of pan-frying it, and it turns out just as crispy with a little less oil.
