I can’t tell you how much fun I had making these Street Corn Smash Burger Tacos! From sizzling burgers on the griddle to mixing that creamy, tangy street corn salad, every step was a joy. The flavors just come together in the best way—sweet corn, juicy beef, and a hint of spice.

Ingredients

  • feta cheese & cotija cheese – a combination that brings salty tangy depth to every bite.

  • lime juice – a squeeze lifts all the flavors and adds a zesty punch.
  • fresh garlic – finely minced to give the salad a savory kick.
  • chili powder & kosher salt – simple seasonings that enhance natural flavors without overpowering.

  • burger sauce – homemade or store-bought this adds creamy, tangy goodness to the tacos.
  • ground beef – 80/20 ratio works best for juicy flavorful patties.
  • sliced cheese – American cheddar, or pepper jack all melt beautifully.
  • tortillas – street taco-sized tortillas are perfect for handling all the toppings.
  • optional toppings: shredded lettuce burger pickles – add extra texture and flavor.

Method
 

  1. I start by mixing corn kernels, mayo, cheeses, cilantro, lime juice, garlic, chili powder, salt, and red onions. Stir until creamy and well combined. This salad is the star of the tacos, so make it fresh!
  2. In a small bowl, whisk together your chosen burger sauce ingredients. I like to prep this ahead so I can focus on cooking the patties. It adds that perfect creamy, tangy layer.
  3. Mix ground beef with salt and pepper, then divide into small balls. Place each on the hot griddle and smash to about ¼ inch thick. I love the crispy edges that form—pure burger bliss!
  4. Cook patties for 40 seconds, flip, and add cheese. Place a tortilla nearby and let it warm. Flip tortillas after 2 minutes, then transfer burgers onto them. Quick and satisfying!
